Living in Dubai, I’m fortunate to experience a vibrant culinary landscape thanks to the rich tapestry of cultures that inhabit the United Arab Emirates. From Thai to Indian, Middle Eastern to Mexican, and everything in between, the diversity of dining options is a feast for the senses. However, amidst the charm of local mom-and-pop eateries lies a contrasting world of bland, mass-produced dishes from national chains, often lacking the soul and flavor of authentic cuisine.
For years, I viewed food as a mere accessory to my day—a necessary addition rather than the centerpiece. However, my recent travels in the Middle East have transformed my perspective. I’ve discovered the beauty of fresh ingredients and local dishes crafted with care, free from the hormones and chemicals that often taint our meals. Each bite tells a story, woven from the spices and textures unique to this region.
As I ventured into Jordan, I was filled with anticipation for the culinary experiences that awaited me. Influenced by neighboring Arab countries and steeped in Bedouin traditions, Jordanian cuisine promised to deliver a delightful blend of flavors, vastly different from the Southeast Asian dishes I had come to know.

My journey began with a warm welcome from Jordan’s culinary scene, where I found that my vegetarian preferences were no hindrance. Instead of fixating on what was missing, I reveled in the rich flavors and ingredients that adorned each dish.
**Something Sweet: Lemon & Mint Drink**
One of my favorite beverages quickly became the refreshing Jordanian lemon and mint drink. Unlike overly sweetened versions, this drink strikes a perfect balance, with tart lemon complemented by finely ground mint. It’s akin to American lemonade but far more invigorating, making it an ideal companion for every meal, especially in the warm Jordanian climate.
**Something Flavorful: Za’atar Manakish**
Za’atar, a magical blend of thyme, savory, oregano, sumac, and sesame seeds, became a revelation for my taste buds. This versatile spice mixture is ubiquitous in Jordanian cuisine, and my favorite way to enjoy it was in manakish—a baked flatbread topped with za’atar. It’s a simple yet fulfilling dish, perfect for breakfast and infused with layers of intense flavor that enhance every bite.

Foul mudammas, or mashed fava beans, captured my heart from the very first day in Amman. This seemingly humble dish transforms into a flavorful experience with an array of toppings—diced tomatoes, parsley, and a drizzle of locally produced olive oil. The warm nuttiness of cumin, combined with the zesty notes of sumac, makes each mouthful a delightful roller-coaster of taste.

No meal in Jordan feels complete without a cup of traditional Arabic coffee, often infused with cardamom. This spice, which I previously associated with Indian sweets, takes on a whole new character in Jordan. The coffee is bold, aromatic, and packs a punch of flavor that invigorates the senses. Its unique profile—a blend of minty coolness and aromatic warmth—creates a memorable finish to every meal.

Through my culinary exploration in Jordan, I realized that the country boasts a distinctive food culture that stands apart from the myriad flavors I experienced in Dubai. The past year and a half in the UAE introduced me to diverse dishes, yet nothing quite compares to the nostalgic joy of discovering new flavors in Jordan.
Food has an unparalleled power to evoke memories and emotions. Each bite transports us back to childhood or ignites connections to past experiences. As I savored the dishes of Jordan, I was reminded of the wonder of first tastes and the memories they create.
