Cheesy Burrata Crostini with Prosciutto and Peaches.

Ingredients:

1 loaf of sourdough or French baguette, sliced
⅓ cup grated Parmesan cheese
⅓ cup grated Pecorino cheese
1 clove garlic, grated
2 tablespoons fresh thyme leaves
2 tablespoons melted butter
4 ounces prosciutto
8 ounces burrata cheese, at room temperature
2 peaches, sliced
Hot honey (for drizzling)
Fresh basil leaves

Instructions:

Preheat the Oven:
Preheat your oven to 400°F (200°C).

Prepare the Cheesy Base:
On a baking sheet, mix together the Parmesan, Pecorino, grated garlic, fresh thyme, melted butter, and a pinch of black pepper. Spread this mixture evenly across the sheet.

Assemble the Bread:
Place the sliced baguette over the cheesy mixture, then brush the tops of the bread with additional melted butter. Arrange the prosciutto slices on top of or around the bread.

Bake:
Bake in the preheated oven for 15-20 minutes, or until the bread is golden and crispy and the prosciutto has crisped up nicely.

Assemble the Crostini:
Transfer the cheesy bread to a serving platter or board. Tear the burrata and spread it over the bread. Top with fresh peach slices, crispy prosciutto, and basil leaves.

Finish and Serve:
Drizzle the crostini with hot honey to add a sweet and spicy kick. These crostini are delicious when served warm, but they’re equally great at room temperature.

Avocado Kiwi Salad 🥑🥝🥗✨

**Ingredients:
- 2 ripe avocados (diced)
- 3 ripe kiwis (peeled and sliced)
- 4 cups mixed greens (lettuce, spinach, or arugula)
- 1/4 red onion (thinly sliced)
- 1/4 cup feta cheese (optional)
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp lime juice
- Salt and pepper to taste

**Directions:
1. Prepare the Ingredients: Dice avocados, peel and slice kiwis, and thinly slice the red onion.
2. Assemble the Salad: In a large bowl, combine mixed greens, diced avocados, sliced kiwis, and red onion.
3. Make the Dressing: In a small bowl, whisk together olive oil, honey, lime juice, salt, and pepper.
4. Toss & Serve: Drizzle the dressing over the salad and toss gently. Optionally, sprinkle feta cheese on top.
5. Serve & Enjoy: A light, refreshing salad with a sweet and tangy twist!
