In 2003, Chef Vanessa Musi nearly lost her life after being stung three times by a deadly scorpion in a remote Mexican village, far from medical help.
She recalls her parents’ words as they rushed her to the hospital: “Fight for your life.”
With her entire life flashing before her eyes, she made a promise:
"If I survive, I will live life to the fullest."
But what does living fully truly mean?
Even before that day, Vanessa had faced more than her share of extraordinary challenges:
-- At 18, she backpacked across Europe, funding her trip by grape-picking in France, hauling heavy buckets under the August sun for nine hours a day.
-- In culinary school, she collapsed during her internship, splitting her head open (13 stitches). She was later diagnosed with reactive hypoglycemia, a condition that causes dangerously low blood sugar just hours after eating.
-- As chef at the Mexican Embassy in Vienna, brutal work hours led to another blackout, this time leaving her with a split lip.
She later discovered her genetics put her at high risk for diabetes.
Intolerant to gluten, carbs, and sugar, many told her:
“You’re not suited to be a chef. Pick another career.”
Her near-death experience became a turning point. Living fully wasn’t about pushing her body to the brink. It was about channeling resilience into creating something meaningful.
Vanessa became the world’s pioneering healthy pastry chef, developing recipes that were gluten-free, lower in sugar, and inclusive of diverse dietary needs.
In Austin, she founded Healthy Baking Lab, offering in-person and online classes. One class alone drew more than 3,500 participants. Her mission is laser focused: “Create a Sweet and Healthy World.”
Vanessa’s Thermomix® journey began in 2003 with the purchase of a Thermomix TM31 in Mexico. Later, in Austin, she upgraded to a Thermomix TM5, and eventually built a thriving career as a Thermomix consultant.
Since then, she has earned 13 TM6 machines, becoming the first Thermomix Diamond Consultant in North America and the #1 seller in North America in both 2021 and 2022.
