🌟Method:
1. Stir-fry the ribs until slightly charred, then add chili peppers, garlic paste, and chili powder to stir-fry until fragrant.
2. Add salt, soy sauce, dark soy sauce, pour in beer and water, and braise for 20 minutes before removing from the pot.

Ingredients:
Beef brisket (or sirloin) 300g
Small red chilies as needed (I put too much, it's a bit spicy)
Pickled chilies 5-6 pieces
Garlic cloves 3-4 pieces
Coriander 3-4 stems
Quarter of an onion (optional, it can easily release water)
Pickled chili sauce as needed
Cooking wine (or brandy) 15ml
Light soy sauce/dark soy sauce/oyster sauce/white pepper powder/cornstarch/cooking oil

Steps:
1️⃣ Marinate the beef with light soy sauce/dark soy sauce/oyster sauce/white pepper powder/cornstarch/cooking oil (must add) for 15 minutes
2️⃣ Prepare the pickled chili sauce: 1 tablespoon of pickled chili water, 1 tablespoon of light soy sauce, half a tablespoon of dark soy sauce, a little monosodium glutamate or chicken essence, mix well and set aside
3️⃣ Cut all the ingredients such as coriander, small red chilies, garlic cloves, and onions and arrange them properly, otherwise you will be in a hurry during the stir-frying process
4️⃣ This step is very important‼️ Take out your iron pan, keep the fire on high throughout, heat the empty pan until it emits white smoke, then pour in the oil (preferably rapeseed oil), add the marinated beef, do not stir immediately!!!! Wait for the beef to set for 15-20 seconds before stirring, sprinkle some brandy in the middle, stir-fry until 80% done and set aside
5️⃣ Clean the pan, after cleaning, heat the empty pan until it emits smoke again before adding oil, first stir-fry the garlic and onions until fragrant, then add the small red chilies and pickled chilies together and stir-fry, about 20 seconds in total
6️⃣ Return the beef to the pan, throw in the coriander, pour in the pickled chili sauce and stir-fry vigorously for 10 seconds
7️⃣ Serve!

High-heat stir-fried beef doesn't easily release water, the pan and plate remain clean after serving (p14-15), here are some tips to share:
1) The choice of beef cut is crucial and must be sliced against the grain, about the thickness of a one-yuan coin, beginners are advised not to slice it too thin, as it may become tough if the heat control is poor
2) When marinating, cooking oil must be added to seal the beef, which helps retain moisture during subsequent stir-frying
3) The iron pan must be heated until it continuously emits white smoke before adding oil, otherwise the food will easily release water

In short, the secret lies in these words: plenty of oil! High heat! Quick flipping!

Ingredients:
Beef cubes, broccoli 🥦, carrots 🥕, corn 🌽, egg 🥚

Instructions:
1️⃣ Blanch the broccoli for 1 minute, then drain and set aside.
2️⃣ Mix all vegetables except broccoli with olive oil, black pepper, and salt.
3️⃣ Roast the vegetables (except broccoli) in an air fryer at 180°C for 15 minutes.
4️⃣ After 15 minutes, add the broccoli and continue to roast for 5 more minutes.
