my mom always baked cheesecakes for special occasions—but never with three layers of chocolate. Years later, I made this triple chocolate cheesecake for her birthday, and her eyes lit up like it was Christmas morning. It’s rich, decadent, and absolutely worth every single bite.

Triple Chocolate Cheesecake with Oreo Crust

Ingredients

For the Crust

28 Oreo cookies

3 tbsp butter, melted

For the Filling

1 ½ cups semi-sweet chocolate chips, melted

24 oz cream cheese (3 packages, room temp)

1 cup granulated sugar

1 cup heavy cream

¼ cup sour cream

3 large eggs

1 tsp vanilla extract

For the Ganache

⅔ cup semi-sweet chocolate chips

½ cup heavy cream

For the Chocolate Whipped Cream

2 cups heavy cream

½ cup powdered sugar

¼ cup unsweetened cocoa powder

Instructions

Crust: Preheat oven to 350°F. Pulse Oreos into fine crumbs, mix with butter, and press into a greased 9” springform pan (about 1.5” up sides). Bake 10 minutes, set aside.

Filling: Melt chocolate chips until smooth, cool slightly. Beat cream cheese and sugar until smooth. Mix in heavy cream and sour cream. Add melted chocolate, then eggs and vanilla (on low, don’t overmix). Pour into cooled crust. Bake 55 minutes, until edges are set but center slightly jiggly. Cool 1 hour, then refrigerate.

Ganache: Heat chocolate chips and heavy cream in microwave (30-sec intervals) until smooth. Spread evenly over chilled cheesecake. Chill at least 2 more hours.

Whipped Cream: Whip cold heavy cream, powdered sugar, and cocoa powder until stiff peaks form. Pipe onto cheesecake before serving.

Slice and enjoy!

Storage

Refrigerate up to 4 days.

Freeze whole or slices, wrapped well, up to 2 months.

When I was in college, my roommates and I would celebrate the first cool day of fall by making pumpkin milkshakes. We’d curl up in blankets, sip them from tall glasses, and pretend we were in some cozy café instead of a drafty apartment. To this day, that creamy blend of pumpkin and spice feels like autumn in a cup.

Pumpkin Milkshakes

Ingredients (serves 4)

29 oz can pumpkin puree

1 pint vanilla ice cream (about 2 cups, softened)

4 cups milk (any variety: whole, skim, almond, oat, etc.)

1 ½ tsp pumpkin pie spice (or make your own with 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger, ⅛ tsp cloves)

Whipped cream (optional, for topping)

Pinch of nutmeg (optional, for garnish)

Instructions

In a blender, combine pumpkin, vanilla ice cream, milk, and pumpkin pie spice.

Sunday dinners always meant mashed potatoes and gravy at my grandma’s table. She never used packets—her gravy was always from scratch, rich and savory, poured generously over everything on our plates. This easy brown gravy recipe reminds me of those comforting meals, but with the bonus of not needing drippings at all.

Easy Homemade Brown Gravy (No Drippings Needed)

Ingredients (makes about 2 cups)

4 tbsp onion, minced

2 tbsp butter

2 cups beef broth

4 tbsp water

2 tbsp cornstarch

Instructions

In a medium saucepan, melt butter over medium heat.

Add onions and cook until tender.

Stir in beef broth and let simmer for about 5 minutes.

In a small bowl, whisk together water and cornstarch to make a slurry.

Slowly pour the slurry into the broth mixture, stirring constantly until the gravy thickens (about 1 minute).

Every Thanksgiving, my dad insisted cranberry sauce was the one thing the table couldn’t do without. While the rest of us were reaching for mashed potatoes and rolls, he was spooning tart, jewel-colored cranberries onto his plate with a smile. Once I learned how quick and easy it was to make from scratch, I never went back to the can—now it’s his favorite part of dinner, made with love.

Classic Cranberry Sauce

Ingredients (10 servings)

½ cup granulated sugar

½ cup brown sugar

3 cups cranberries (fresh or frozen)

1 cup orange juice

Pinch of cinnamon

Instructions

In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and orange juice. Stir until sugars dissolve.

Add cranberries and a pinch of cinnamon.

Cook about 10 minutes, until cranberries begin to pop.

For smoother sauce, lightly mash some of the berries; leave some whole if preferred.

Remove from heat, cool for 30 minutes, then refrigerate to set and thicken.

Storage

Store covered in the fridge for up to 2 weeks.

When I was younger, my mom always looked for ways to sneak veggies into desserts—zucchini in brownies, carrots in muffins, and my favorite: zucchini in bread. But when she added apples to her zucchini loaf one fall, it became something truly special. Warm, spiced, moist, and with little bursts of apple, it’s still a recipe that makes me think of cozy afternoons in her kitchen.

Apple Zucchini Quick Bread

Ingredients (makes 2 loaves)
For the Bread

4 large eggs

1 cup granulated sugar

1 cup brown sugar

½ cup unsweetened applesauce (or vegetable oil)

1 tsp vanilla extract

3 ½ cups all-purpose flour

1 ½ tsp baking soda

½ tsp salt

2 tsp cinnamon

2 cups shredded zucchini

1 cup diced apple (Granny Smith or Gala)

For the Topping

4 tbsp butter, softened

4 tbsp granulated sugar

2 tsp cinnamon

Instructions

Preheat oven to 325°F. Grease two 9×5” loaf pans with nonstick spray.

In a large bowl, whisk eggs, both sugars, applesauce, and vanilla until combined.

In another bowl, whisk flour, baking soda, salt, and cinnamon.

Add dry mixture into wet mixture; stir until just combined.

Fold in shredded zucchini and diced apple. Divide batter evenly into pans.

Mix topping ingredients (butter, sugar, cinnamon) with a fork until crumbly. Sprinkle over batter.

Bake 1 hour, or until a toothpick inserted in center comes out clean.

Cool slightly in pans before removing and slicing.

Storage

Keeps 4–5 days at room temp in an airtight container.

my siblings and I would gather around the kitchen table every December with bowls of sprinkles, tubes of colored icing, and a pile of sugar cookies waiting to be decorated. We didn’t care if they came out messy or perfect—it was the tradition that made it magical. These Christmas sugar cookies remind me of those afternoons, filling the house with buttery sweetness and laughter.

Christmas Sugar Cookies

Ingredients (about 36 cookies)

1 cup unsalted butter (2 sticks), room temperature

1 cup granulated sugar

2 large eggs, room temperature

1 tsp pure vanilla extract

1 tsp almond extract

4 cups all-purpose flour

½ tsp salt

Best Ever Sugar Cookie Icing (for decorating)

Pearl sugar balls, dragees, or sprinkles (optional)

Instructions

In a large mixing bowl, cream butter and sugar together until light and fluffy (about 3 minutes).

Beat in eggs, vanilla, and almond extract until combined.

Mix in salt and 3 cups of flour. If dough is sticky, add more flour, 1 tbsp at a time, until it comes together.

Divide dough into two discs, wrap in plastic, and chill at least 1 hour.

Preheat oven to 375°F. Line baking sheets with parchment or silicone mats.

Roll dough on a lightly floured surface to ¼-inch thickness. Cut into shapes with cookie cutters.

Place cookies on prepared sheets, then chill for 15 minutes before baking to help hold shape.
