Thai Chicken Bowls
I made the marinade early this morning and let the thighs marinate in the fridge for about 8 hours. Then baked them in the oven, instead of grilling, because my stove is clean 😝
I served it with cold rice noodles, bean shoots, some the big batch of slaw I made earlier in the week and homemade pickled onion.
I made a sauce with the same ingredients and drizzled it over the top of everything to finish it off.
It was absolutely delicious and I loved every bite.
Thai Chicken Thighs (serves 4)
Ingredients:
8 chicken thighs (boneless)
2 tbsp white miso paste
2 tbsp soy sauce (or tamari)
2 tbsp fish sauce
2 tbsp lime juice
1 tbsp honey
1 tbsp grated fresh ginger
2 garlic cloves, minced
1 tsp chili flakes (adjust to taste)
1 tbsp sesame oil or neutral oil
