Atomic Beer Battered Onion Rings! 🔥🧅🍺

Heard you could make a beer batter with Atomic Chicken’s Southern Fried Chicken coating and had to give it a crack. Straight home, grabbed some onions, mixed the batter with Carlton Draught (sparkling water works too), and into the oil they went.

Result? Crispy, golden, bloody awesome onion rings with just a tiny kick of heat. These are definitely going on the weekly roster, the little one smashed them too! 👌🔥

Venison Backstrap over charcoal last night 🔥
I grabbed some venison backstrap from the legends at Australian Meats and wow, this was next level!

Cooked indirect on the kettle with the offset plate, then finished with a hot sear for that perfect blushing pink centre. Paired it with portobello mushrooms and baby carrots, all basted in butter and herbs.

Juicy, tender, and packed with flavour. 🤤

Steak & Frites done almost right 🔥🥩🍟

Cooked up a full rump steak in the iron pan with a good hit of beef tallow. Separated the rump from the cap and seared it off, while that was cooking I whipped up some cowboy butter and got the chips rolling.

For plating, I took a little inspo from Jess Pryles and smashed that cowboy butter onto the board for perfect distribution across the steak (The Butter Board). Simple, bold, and ridiculously tasty. Steak and chips… can’t beat it! 🤤

Could have had a better sear on the Main steak but there's always next time!

Gave the new stainless flat plate its maiden voyage today with some meat chips! 🔥
Got the kettle roaring, smashed on the plate, and sliced up some homemade Cacciatore.
Cooked them until perfectly crispy!
Salty, crunchy, and absolutely delicious! 😋🥩

Double Southern Fried Chicken Burger 🍗🔥

Finally got around to trying the Southern Fried Chicken coating and it did not disappoint, absolute flavour bomb!

🧂 Chicken thighs soaked in buttermilk overnight
🧤 Coated up using trusty
🔥 Fired up the Weber with the chimney and straight into their Krispy Kone
⏱️ Lid turned every 15 mins or so and just over an hour and it was golden perfection
🍞 Buns got a quick toast near the end, then it was go-time:
Kewpie mayo, pickles, double chicken and a pile of slaw…

This thing slapped. Hard.

Brisket leftovers?! What are those?? 😅
On the rare occasion there’s any left, I like to mix things up and this time it was brisket spring rolls! 🔥
Packed with lemongrass, carrots, onions, fresh spring onions, coriander, and of course… that juicy brisket.
These things were absolutely banging! Crispy, fresh, and loaded with flavour!

Still thinking about those bao buns from the other night, so we ran it back...this time with brisket! 🔥Picked up a beaut...

Still thinking about those bao buns from the other night, so we ran it back...this time with brisket! 🔥
Picked up a beautiful brisket from the_meat_inn_place_ and cooked it low and slow in the kettle.
Sliced it up, let it sit back in those juicy drippings, and loaded up some bao buns for round two.
Plenty of leftovers too… stay tuned for some tasty creations coming soon 👀

Low and slow beef cheeks on the kettle today! 🔥
Ran them with the offset plate, and once they hit temp, they went into a boat of ginger beer, butter and brown sugar to braise down into something magic.
Pulled, tossed back in those rich juices, and loaded into fluffy bao buns.
Perfect winter feed if you ask me 👌

🔥 Rump Cook on the GA Tonight 🔥
Took a nice rump, sliced off the cap and gave it a quick indirect start before finishing hot and fast over the coals.
Served it up with chimichurri, mustard and a smooth pumpkin mash – simple but packed with flavour!
