Reverse seared to perfection, topped with some fresh chimichurri and served up with silky pumpkin purée, this one was absolutely next level! 🥩✨

Double Southern Fried Chicken Burger 🍗🔥

Finally got around to trying the Southern Fried Chicken coating and it did not disappoint, absolute flavour bomb!

🧂 Chicken thighs soaked in buttermilk overnight
🧤 Coated up using trusty
🔥 Fired up the Weber with the chimney and straight into their Krispy Kone
⏱️ Lid turned every 15 mins or so and just over an hour and it was golden perfection
🍞 Buns got a quick toast near the end, then it was go-time:
Kewpie mayo, pickles, double chicken and a pile of slaw…

This thing slapped. Hard.

Brisket leftovers?! What are those?? 😅
On the rare occasion there’s any left, I like to mix things up and this time it was brisket spring rolls! 🔥
Packed with lemongrass, carrots, onions, fresh spring onions, coriander, and of course… that juicy brisket.
These things were absolutely banging! Crispy, fresh, and loaded with flavour!

Still thinking about those bao buns from the other night, so we ran it back...this time with brisket! 🔥
Picked up a beautiful brisket from the_meat_inn_place_ and cooked it low and slow in the kettle.
Sliced it up, let it sit back in those juicy drippings, and loaded up some bao buns for round two.
Plenty of leftovers too… stay tuned for some tasty creations coming soon 👀

Low and slow beef cheeks on the kettle today! 🔥
Ran them with the offset plate, and once they hit temp, they went into a boat of ginger beer, butter and brown sugar to braise down into something magic.
Pulled, tossed back in those rich juices, and loaded into fluffy bao buns.
Perfect winter feed if you ask me 👌

Took a nice rump, sliced off the cap and gave it a quick indirect start before finishing hot and fast over the coals.
Served it up with chimichurri, mustard and a smooth pumpkin mash – simple but packed with flavour!

🪵 Cooked on the GA using the CLD Fabrication chimney, grill and offset plate

🔥 Pork Loin Perfection on the Kettle! 🔥

Cooked up a juicy pork loin on the kettle tonight using the CLD Fabrication Offset plate and Chimney, it did not disappoint!

Used Olive Pip Co. charcoal for that steady, clean heat and threw on a chunk of apple wood for a subtle smoky kiss 🍎🔥
Rubbed it down in Lane's BBQ Australia Signature for that classic flavour hit, then roasted up some veggies seasoned with Atomic Chicken Charcoal Chicken for the perfect side.

Sliced it all up on The Australian Brisket Board (as always 👌) and hit it with a homemade honey soy glaze, plus a dollop of Mama Melisse Mustard to finish.
And of course, all handled like a pro with the trusty Black Tiger Gloves 🧤

Smashed out this awesome steak set for the Wife and I tonight 🔥🥩

Started on the The Australian Brisket Board with a simple Salt & Pepper rub on one and a good hit of Hardcore Carnivore Black on the other.

Fired up some Olive Pip Co. beads in the CLD Fabrication Chimney Starter and loaded them into the kettle using the CLD Offset Plate. Bit of Banksia wood for smoke, brought them up to temp low ‘n slow, then gave them a solid 15-minute rest.

Finished off with a quick sear over the coals and back onto the board for slicing.
Mine got the Toads Kitchen Cupboard chimichurri treatment 🌿, and the wife's was topped with a dollop Mama Melisse mustard from Turn left at Albuquerque

Turned out bloody perfect.

This time I went all in with their bacon jam burger, stacked with crispy onion rings and slipped in a sneaky second patty to make it a double 😮‍💨🔥
Absolutely delicious and well worth the drive!
If you’re anywhere nearby, don’t hesitate to swing past for a burger and maybe grab a cheeky jam donut from the van next door while you’re at it 🍩😉

Sausage & Egg Dinner Wrap!
Not exactly a kettle cook but still BBQ inspired! 😅
Had to improvise with what was left in the fridge: homemade Cacciatore (Italian sausage salami) fried up until it turned into crunchy meat chips, scrambled eggs, a sprinkle of Lane's BBQ Signature rub, cheese, a dash of Lane’s Kinda Sweet, all wrapped up and toasted to perfection.

And of course, it was all prepped on the The Australian Brisket Board 🇦🇺🔥

This thing was next level! The Cacciatore was crispy, salty, and addictive, and the Signature rub paired ridiculously well with the eggs. Definitely doing this one again, might even make a whole batch of meat chips just on their own 😏

Pork belly ramen kinda night 🔥🍜
Cooked up some epic pork belly on the kettle last night and dropped it into some simple ramen, let’s be honest, it was really just an excuse to smash some pork belly 😅

Gotta say, I get the hype around these belly plates now. Probably the best and easiest pork belly I’ve done. Trick was pulling it back from the heat a bit and giving it more time. Worth it.

Gear used:
🔥 our very own stainless charcoal chimney + stainless offset plate
🔥 stainless grill grate
🔥 charcoal red beads
🔥 Belly rack is a homemade job, but check out if you want one
🍜 Mr Chen’s miso soup from Woolies was actually bloody good!
