A classic prawn cocktail — simple, nostalgic and always a crowd-pleaser. Sweet Australian tiger prawns, crisp iceberg and a creamy, tangy dressing that comes together in minutes. Perfect for easy entertaining or when you want something that feels a little bit special without the fuss.

Cocktail sauce
Mix together Kewpie mayonnaise, tomato ketchup, Worcestershire sauce, lemon juice, a pinch of Aleppo chilli or cayenne, and season with salt and pepper to taste.

To assemble
Layer crisp iceberg lettuce and peeled cooked Australian tiger prawns in a pretty glass. Spoon over the sauce, then finish with a scatter of diced cucumber, finely sliced shallots and chives. Serve with a lime wedge on the side.

Fresh, light and made for an Australian summer Christmas.

This sashimi platter is all about letting beautiful seafood shine — silky salmon, tuna and kingfish dressed simply with a punchy ginger–sesame dressing that delivers big flavour with minimal effort.

Make the dressing ahead, slice just before serving, scatter with finely chopped spring onion, chilli, sesame seeds and coriander and let the platter do the talking. Elegant, unfussy and perfect for long lunches, warm evenings and effortless entertaining.

Ginger Mirin and Soy Dressing
1 tbsp water
2 tbsp rice vinegar
2 tbsp tamari
1 tbsp mirin
1 tsp brown sugar
2 cm ginger, finely grated
2 tsp sesame oil
1 tsp chilli flakes

Simply combine ingredients in a bowl, can be stored in refrigerator for up to a week.

Beautiful recipes by the talented in this months TOM YUM RICE NOODLES
Preparation Time 20 mins plus noodles soaking time
Cooking Time 10 mins
Serves 4 as a light meal

250g medium rice stick noodles
1 bunch coriander, washed
2 Tbsp vegetable oil
1 stalk lemongrass, white end finely sliced
1 red onion, sliced
2 cloves garlic, crushed
3 Tbsp tom yum paste
150g pork fillet, sliced thinly
10 medium green prawns, peeled, deveined, tail intact
1 tsp palm sugar
3 kaffir lime leaves, thinly sliced (optional)
10 cherry tomatoes
1 bunch green leafy vegetables, washed and chopped (g*i lan or choy sum)
2 Tbsp fish sauce
2 Tbsp soy sauce
1 – 2 birds eye chilies, sliced (optional)
1 Tbsp lime juice
Thai basil leaves, Crushed peanuts, Lime wedges, to serve

STEP 1 Cover noodles in cold water and soak until tender. Drain. Wash coriander and finely chop roots and stems. Reserve leaves for garnish.

STEP 2 Heat oil in a wok or large deep-frying pan over medium to high heat. Add coriander root and stem, onion, lemongrass and garlic. Stir fry for 1 minute or until fragrant. Stir in paste.

STEP 3 Add pork and stir fry for 1 minute. Add prawns and sugar. Stir fry for a further minute or until pork is nearly cooked.

STEP 4 Add lime leaves, tomatoes and green vegetables. Stir fry for 1 minute. Add noodles, fish sauce, soy and chillies. Stir fry until noodles are hot. Squeeze over lime.

STEP 5 Transfer to a serving plate. Garnish with herbs and peanuts. Serve with lime wedges.
