Gluten-Free Puff Pastry....... 😋😋😋

👉 Ingredients
• 2 cups gluten-free all-purpose flour (with xanthan gum, if not already included)
• ½ tsp salt
• ½ cup cold water
• 1 tsp vinegar or lemon juice
• 1 cup (225 g) cold unsalted butter, cubed

💁‍♂️ Instructions:
• In a large bowl, whisk together the gluten-free flour and salt.
• Stir in cold water and vinegar (or lemon juice) until a rough dough forms.
• Do not overmix. Wrap in plastic wrap and refrigerate for 30 minutes.
• Place cold cubed butter between two sheets of parchment paper.
• Roll into a rectangle about ½ inch (1.2 cm) thick.
• Keep it chilled until ready to use.
• Roll the chilled dough into a rectangle slightly larger than the butter block.
• Place butter in the center, fold dough over like an envelope, and seal edges.
• Roll dough gently into a long rectangle.
• Fold into thirds (like a letter).
• Wrap and chill for 30 minutes.
• Repeat the rolling and folding 4–5 times, chilling for 20–30 minutes between each fold.
• This creates the flaky puff pastry layers.
• After the last fold, wrap well and chill for at least 1 hour.
• Roll out as needed for pastries, pies, or tarts.

Castella Sponge Cake Recipe...... 😋😋😋

👉Ingredients:
• 4 large eggs (room temperature)
• 120 g (½ cup + 2 tbsp) granulated sugar
• 100 g (¾ cup) bread flour (sifted)
• 40 ml (3 tbsp) milk (warm)
• 30 ml (2 tbsp) neutral oil (vegetable/canola)
• 1 tsp vanilla extract

💁‍♂️Instructions:
• Preheat oven to 160°C (320°F).
• Line a 7x7 inch square pan (or loaf pan) with parchment paper, leaving extra on the sides for easy lifting.
• In a small bowl, mix warm milk, oil, and vanilla. Set aside.
• In a large heatproof bowl, add eggs and sugar.
• Place bowl over a pot of simmering water (double boiler method). Whisk gently until the mixture reaches about 40°C (lukewarm)—this helps sugar dissolve.
• Remove from heat.
• Using a hand mixer, beat the egg mixture on high speed for 5–7 minutes until thick, pale, and tripled in volume.
• Switch to low speed for 1 minute to remove large air bubbles.
• Sift bread flour over the batter in 2–3 additions.
• Fold gently with a spatula, keeping as much air as possible.
• Take a small scoop of batter and mix it into the milk-oil mixture (to lighten it).
• Then gently fold it back into the main batter until just combined.
• Pour batter into the lined pan. Tap lightly to release air bubbles.
• Bake at 160°C (320°F) for 35–40 minutes, until golden brown and springy to the touch.
• Remove from oven and immediately drop the pan gently on the counter (prevents shrinkage).
• Lift the cake out using parchment paper and let cool on a wire rack.
• For best flavor, wrap the cooled cake in plastic wrap and let it rest overnight at room temperature. This helps the texture become moist and smooth.
• Slice with a sharp knife (wipe clean between cuts).

👉Ingredients :
• ¾ cup (95 g) all-purpose flour
• ½ tsp baking powder
• Pinch of salt
• ¼ cup (60 g) unsalted butter, softened
• ½ cup (100 g) sugar
• 1 large egg (room temperature)
• 1 ½ tsp vanilla extract
• ⅓ cup (80 ml) milk (room temperature)

👩‍🍳 Instructions:
• Preheat oven to 350°F (175°C).
• Grease and line a 4–5 inch round cake pan (or two mini pans for layers).
• In a bowl, whisk together flour, baking powder, and salt.
• In another bowl, beat softened butter and sugar until light and fluffy (about 2 minutes).
• Mix in the egg and vanilla extract until smooth.
• Add the flour mixture in 2 parts, alternating with milk.

Vanilla Sponge Cake.....

Ingredients (for one 7-inch round cake):
• 3 large eggs (150g, room temperature)
• ½ cup (100g) sugar
• ½ cup (70g) all-purpose flour (sifted)
• 2 tbsp (15g) cornflour (cornstarch)
• 2 tbsp (15g) milk powder (optional, for richness)
• ½ tsp baking powder
• 2 tbsp (20ml) oil or melted butter
• 1 tsp vanilla extract

👩‍🍳 Instructions:
1. Preheat oven to 170°C (340°F). Grease and line a 7-inch round cake pan.
2. Whip eggs & sugar: In a mixing bowl, beat the eggs and sugar together with a hand mixer (or stand mixer) until pale, fluffy, and tripled in volume (about 6–8 minutes).
3. Add vanilla: Mix in vanilla extract.
4. Sift dry ingredients: In a separate bowl, sift flour, cornflour, milk powder, and baking powder together.
5. Fold gently: Using a spatula, fold the dry ingredients into the egg mixture in 2–3 additions. Do this slowly to keep the batter airy.

• 1 ½ tsp baking powder
• ¼ tsp salt
• ½ cup (120 ml) milk, room temperature

• 1 cup (225 g) unsalted butter, softened
• 1 cup (200 g) granulated sugar
• 4 large eggs, room temperature

👩‍🍳 Instructions:

1. Prep:
• Preheat oven to 350°F (175°C).
• Grease and line an 8-inch round or square cake pan with parchment paper.

2. Mix Dry Ingredients:
• In a bowl, whisk flour, baking powder, and salt. Set aside.

3. Cream Butter & Sugar:
• In a large bowl, beat butter and sugar together with a hand mixer or stand mixer until light and fluffy (about 3–4 minutes).

4. Add Eggs & Vanilla:
• Beat in eggs one at a time, mixing well after each addition.
• Stir in vanilla extract.

5. Combine with Flour & Milk:

• 1 cup mashed cooked sweet potato (about 1 medium, boiled or roasted)
• 1 cup cornmeal (yellow or white)
• 1 cup all-purpose flour
• 1 tbsp baking powder
• ½ tsp salt
• ½ cup milk (whole milk or buttermilk for extra tenderness)

• ⅓ cup melted butter (slightly cooled)
• ¼ cup honey (or maple syrup for variation)

💁‍♂️Instructions:

• Preheat oven to 375°F (190°C).
