Milk Brioche Rolls

Ingredients
• 4 cups all-purpose flour 🌾
• 1/3 cup granulated sugar 🍬
• 1 teaspoon salt 🧂
• 2 1/4 teaspoons active dry yeast (1 packet)
• 1/4 cup warm water (110°F)
• 2/3 cup whole milk, warmed 🥛
• 3 large eggs, at room temperature
• 1 stick (1/2 cup) unsalted butter, softened 🧈
• 1 egg, beaten (for egg wash)

Instructions

1. Activate the Yeast
• In a small bowl, dissolve yeast in the warm water with a pinch of sugar.
• Let sit for 5–10 minutes until foamy.

2. Make the Dough
• In a large mixing bowl (or stand mixer bowl), whisk together flour, sugar, and salt.
• Add the foamy yeast mixture, warm milk, and eggs.
• Mix until a sticky dough forms.

3. Add Butter
• Gradually add the softened butter, a little at a time, kneading until fully incorporated.
• Knead the dough (by hand ~10 minutes, or stand mixer with dough hook ~7 minutes) until it becomes smooth, elastic, and slightly tacky.

4. First Rise
• Place dough in a greased bowl, cover, and let it rise in a warm place for 1–2 hours until doubled in size.

5. Shape the Rolls
• Punch down the dough and divide into 12–15 equal pieces.
• Shape into smooth balls or small log shapes and place on a parchment-lined baking pan.

6. Second Rise
• Cover loosely with a towel and let rise again for 45–60 minutes until puffy.

7. Bake
• Preheat oven to 375°F (190°C).
• Brush the tops with the beaten egg wash.
• Bake for 18–22 minutes, until golden brown and hollow-sounding when tapped.

8. Cool & Serve
• Let cool slightly before serving.
• Best enjoyed warm with butter, jam, or honey. 🍯

The Best & Easy Dinner Rolls Recipe 😋✨

👉 What you’ll need:
• 1 cup warm milk (110°F / 43°C)
• 2 ¼ tsp active dry yeast (1 packet)
• ¼ cup sugar
• 4 cups all-purpose flour
• ¼ tsp salt
• 2 large eggs
• ⅓ cup melted butter

💁‍♂️ How to make ‘em:
1. Wake up the yeast – Mix the warm milk, sugar, and yeast in a big bowl. Let it sit 5–10 mins till it gets nice and foamy.
2. Make the dough – Add eggs, melted butter, flour, and salt. Mix it up till it comes together.
3. Knead & rise – Knead for 8–10 mins (or just use a mixer) till smooth. Pop it in a greased bowl, cover, and let it rise for about an hour till doubled.
4. Shape the rolls – Punch it down, cut into 12–16 pieces, roll ‘em into balls, and place on a greased pan.
5. Second rise – Cover and let them puff up again for 30–40 mins.
6. Bake time – Brush tops with egg wash or butter. Bake at 350°F (175°C) for 18–22 mins till golden.
7. Finishing touch – While still warm, brush with extra butter for that soft, shiny, bakery

Delicious Jam Doughnuts Recipe
Ingredients :-
1 cup skim milk
½ cup heavy whipping cream
⅓ cup unsalted butter
⅓ cup warm water
2 packages active yeast
2 large eggs
¼ cup sugar
1 ½ teaspoon kosher salt
1 teaspoon ground nutmeg
4 ½ cups all-purpose flour
Vegetable Oil for frying
1 cup granulated sugar for coating
1 cup raspberry preserves for filling

Instructions :-
1. Heat milk, cream, and butter in a small saucepan until melted completely. Set aside to cool to lukewarm.
2. Pour warm water into the mixer bowl (make sure the bowl is warm). Sprinkle yeast over the water. Let sit for about 5 minutes until bubbly.
3. Add the lukewarm butter mixture to the yeast mixture and combine.
4. Add eggs, sugar, salt, and nutmeg.
5. Add 2 cups of flour. Mix using the paddle attachment on low speed until the flour is incorporated.
6. Increase to medium speed and beat until well combined.
7. Add the remaining flour in ½ cup increments.
8. Switch to the dough hook attachment and beat on medium for about 3–4 minutes. The batter will be very sticky.
9. Transfer the dough to a well-oiled bowl. Cover and let rise for about 1 hour.
10. On a floured surface, roll the dough to about ½ inch thick. Roll as little as possible and avoid pressing hard with the rolling pin.
11. Cut shapes using a 2–3 inch cookie cutter. Triangles or circles both work.
12. Place the cut doughnuts on a floured surface, cover, and let rise for 30–60 minutes.
13. Preheat oil in a stainless skillet or saucepan.
14. When the oil is hot, fry the doughnuts for 2–4 minutes on each side, until browned.
15. Transfer to a bowl with granulated sugar and coat generously. Place on a cooling rack.
16. Once cooled, stir jam until almost runny and place in a pastry bag with an open tip.
17. Insert the tip into one end of each doughnut and squeeze until the doughnut puffs slightly (stop before it bursts or leaks).
18. Store doughnuts at room temperature in a covered container, or freeze for later. Thaw at room temperature before serving, and re-dip in sugar if needed.

• 1 1/4 cups (2 1/2 sticks) unsalted butter, cold 🧈
• 1 cup cold milk 🥛

Instructions

1. Prepare the Dough
• In a large mixing bowl, whisk together flour, sugar, yeast, and salt.
• Add the cold milk and mix until a shaggy dough forms.
• Knead lightly (about 3–4 minutes) just until it comes together.
• Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.

2. Prepare the Butter Block
• Cut the cold butter into slices and arrange them into a square on parchment paper.
• Use a rolling pin to flatten and shape into a neat 6-inch square.
• Chill until firm but pliable.

3. Laminate the Dough (Butter Layers)
• Roll the chilled dough into a 10-inch square.
• Place the butter block in the center at a 45° angle (like a diamond shape).
• Fold the corners of the dough over the butter, sealing it completely.
• Roll into a rectangle, about 8x20 inches.
• Fold into thirds (like a letter). Wrap and refrigerate for 30 minutes.
• Repeat this rolling and folding process 3 times, chilling between each fold.

• Roll the dough into a large rectangle, about 1/4 inch thick.
• Cut into long triangles.
• Starting from the wide end, roll each triangle tightly into a croissant shape.
• Place on a parchment-lined baking sheet.

5. Proof (Final Rise)
• Cover loosely and let rise at room temperature for 1–2 hours, until puffy and nearly doubled.

6. Bake
• Preheat oven to 400°F (200°C).
• Brush croissants with an egg wash (1 beaten egg + splash of milk).
