Japanese-style Souffle Pancakes are Incredibly Fluffy
Soufflé Pancakes are a popular trend in Japan, but you can recreate them in your own home. These do take more effort than your regular classic buttermilk pancakes, but they are a fun treat.
Ingredients:
6 tbsp cake flour
2 1/2 tbsp skim milk
1 tsp baking powder
1/4 tsp vanilla extract
1/2 tbsp full-fat mayonnaise or Kewpie mayonnaise. This is the Japanese mayonnaise
3 tbsp granulated white sugar
2 large eggs, egg whites, and egg yolks separated

YOGURT SPONGE CAKE

Ingredients;

¾ cup (150 grams/ 5.3Oz)granulated sugar

1 cup (250 grams/ 8.8Oz)plain yoghurt or plain Greek yoghurt

½ cup oil (125 ml) any neutral-tasting oil.

1 teaspoon vanilla extract

1 ½ cups (180 grams/ 6.3Oz) flour

1 ½ teaspoons baking powder

¼ teaspoon salt

¼ teaspoon nutmeg

3 large eggs

Instructions;
Grease a 9-inch cake pan or loaf pan and preheat the oven to 350 degrees F (180 degrees C).

In a mixing bowl, whisk together 1 cup of plain yogurt, ½ cup of oil, ¾ cup of sugar, and one teaspoon of vanilla extract.

Add 1.5 cups of flour, 1.5 teaspoons of baking powder, ¼ teaspoon salt, and ¼ teaspoon nutmeg, and mix until combined. If you are using a stand mixer, be careful not to overmix the batter.

Add three eggs one at a time, whisking every time you add an egg to incorporate it into the batter.

Pour the batter into the prepared pan, then bake in a preheated oven for 35 minutes until golden brown and a toothpick inserted into the middle of the cake comes out clean.

Let the cake cool, then remove it from the pan, slice, and serve.

Christmas Fruit Loaf Cake

Ingredients
• 2 cups (250g) all-purpose flour
• 1 cup (200g) brown sugar
• 1 cup (230g) unsalted butter, softened
• 4 large eggs
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp ground cinnamon
• ½ tsp ground nutmeg
• ½ tsp ground cloves
• 1 tsp vanilla extract
• ¼ cup (60ml) orange juice
• 1 tbsp orange zest
• 1 cup (150g) mixed dried fruits (raisins, sultanas, cranberries, cherries)
• ½ cup (80g) chopped nuts (almonds, walnuts, pecans)
• 2 tbsp flour (for coating fruits)
• Optional: 2 tbsp rum or brandy for soaking fruits

Instructions
Cream butter and sugar until light and fluffy, then beat in eggs one at a time. Add vanilla, orange juice, and zest. In another bowl, whisk flour, baking powder, baking soda, salt, and spices. Toss dried fruits and nuts with 2 tbsp flour to prevent sinking. Gently fold dry ingredients into wet mixture, then fold in fruits and nuts. Pour batter into a greased and lined loaf pan. Bake at 160°C (320°F) for 60–75 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.

For extra flavor, brush the top with a little rum or brandy while warm. Dust with powdered sugar or glaze for a festive finish.
