Battered Fish Fingers and Homemade Chips
Ingredients:
For the Fish Fingers:
4 white fish fillets (such as cod or haddock, cut into 1-inch strips)
1 cup all-purpose flour (for dredging)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika
1 egg
1/2 cup milk
1 cup breadcrumbs (preferably panko for extra crunch)
Oil for frying (vegetable or sunflower oil)
For the Homemade Chips:
4 large potatoes (peeled and cut into thick fries or wedges)
2 tbsp olive oil
Salt (to taste)
Black pepper (to taste)
1 tsp dried rosemary (optional)
For Serving:
Tartar sauce (for dipping)
Lemon wedges (for squeezing over the fish)
Instructions:
1. Prepare the Homemade Chips:
Preheat the oven to 425°F (220°C).
Place the potato wedges on a baking sheet. Drizzle with olive oil and season with salt, pepper, and rosemary (if using). Toss to coat evenly.
Bake for 25-30 minutes, flipping halfway through, until the chips are golden and crispy.
2. Prepare the Fish Fingers:
Set up a breading station: In one shallow dish, place the flour, salt, pepper, garlic powder, and smoked paprika. In a second dish, whisk together the egg and milk. In a third dish, place the breadcrumbs.
Dredge each piece of fish in the flour mixture, dip into the egg wash, and then coat in breadcrumbs, pressing gently to adhere.
3. Fry the Fish Fingers:
Heat about 1 inch of oil in a large skillet over medium-high heat. Once hot (around 350°F or 175°C), carefully add the fish fingers to the skillet in batches.
Fry for 3-4 minutes per side until golden brown and crispy. Remove from the oil and drain on paper towels.
4. Serve:
Plate the crispy fish fingers alongside the homemade chips. Serve with tartar sauce and lemon wedges on the side for dipping and squeezing over the fish.
