Battered Fish Fingers and Homemade Chips
Ingredients:
For the Fish Fingers:

4 white fish fillets (such as cod or haddock, cut into 1-inch strips)
1 cup all-purpose flour (for dredging)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika
1 egg
1/2 cup milk
1 cup breadcrumbs (preferably panko for extra crunch)
Oil for frying (vegetable or sunflower oil)
For the Homemade Chips:

4 large potatoes (peeled and cut into thick fries or wedges)
2 tbsp olive oil
Salt (to taste)
Black pepper (to taste)
1 tsp dried rosemary (optional)
For Serving:

Tartar sauce (for dipping)
Lemon wedges (for squeezing over the fish)
Instructions:
1. Prepare the Homemade Chips:

Preheat the oven to 425°F (220°C).
Place the potato wedges on a baking sheet. Drizzle with olive oil and season with salt, pepper, and rosemary (if using). Toss to coat evenly.
Bake for 25-30 minutes, flipping halfway through, until the chips are golden and crispy.
2. Prepare the Fish Fingers:

Coconut Cream Dream Cake
Ingredients
Cake:

1 box white cake mix (Duncan Hines recommended)
3 large eggs
1 cup milk
½ cup vegetable oil
1 small box vanilla or almond pudding mix
1 tsp vanilla or almond extract
Topping:

1 can cream of coconut
1 can sweetened condensed milk
8 oz Extra Creamy Cool Whip
12 oz frozen grated coconut
Instructions
Prepare the Cake: Preheat oven according to cake mix instructions. In a mixing bowl, combine cake mix, eggs, milk, oil, pudding mix, and extract. Mix until smooth.
Bake: Pour batter into a greased 9x13-inch baking pan and bake according to package instructions or until a toothpick comes out clean.
Soak with Coconut Cream: Once out of the oven, use a fork to poke holes in the warm cake. Mix cream of coconut with sweetened condensed milk, then pour evenly over the cake. Let it soak in.
Top with Cool Whip & Coconut: Once the cake has cooled, spread Cool Whip over the top and sprinkle generously with grated coconut. Cover and chill for at least 4 hours (or overnight for best flavor).

Philly Cheese Steak Casserole
1 ½ lb. Ground beef
2 Bell peppers chopped
½ Onion chopped
2 tsp. Minced garlic
1 tsp. Seasoned salt
8 Slices provolone cheese
4 Large Eggs
¼ C. Heavy whipping cream
2 tsp. Worcestershire sauce
Preheat the oven to 350 degrees.
In a skillet over medium high heat on the stove, begin to brown the meat.
When the meat is partially browned, add the onions and peppers to the skillet. Cook until the meat is completely browned and the vegetables are beginning to soften.
Add the seasoned salt and minced garlic to the skillet and saute another 30 seconds. Drain any excess grease.
Layer the beef in the bottom of a well greased 9×9 baking dish.
Top the beef with the cheese slices.
Mix together the heavy whipping cream, Worcestershire sauce and eggs in a bowl, and pour over the meat mixture in the baking dish.
Bake for 35-40 minutes until cooked through.

🍓 1 cup strawberries, hulled and halved
🍉 1 cup watermelon, cubed
🍊 1 cup orange slices
🍍 1 cup pineapple chunks
🍌 2 bananas, sliced
🥝 2 kiwis, peeled and sliced
🍏 1 cup green apple slices, tossed with lemon juice to prevent browning
🍇 1 cup red and green grapes
🫐 1 cup blueberries
🍒 1 cup cherries (optional)
🍋 1 lemon, sliced into thin rounds for garnish

Ingredients:

Steak:

2 ribeye steaks (or preferred cut)
2 tbsp olive oil
2 tbsp Cajun seasoning
2 tbsp unsalted butter
Shrimp:

1 lb large shrimp, peeled and deveined
2 tbsp olive oil
2 tbsp Cajun seasoning
2 cloves garlic, minced
1 tbsp lemon juice
Sides:

2 cups cooked rice or mashed potatoes (for serving)
Fresh parsley, chopped (for garnish)
Instructions:

Season the Steak:

Rub the steaks with olive oil and sprinkle with Cajun seasoning on both sides.
Let the steaks rest at room temperature for 20 minutes.
Cook the Steaks:

In a hot skillet, sear the steaks for 3-4 minutes on each side for medium-rare, or adjust time to your desired doneness.
Add butter to the skillet in the last minute of cooking and spoon over the steaks.

INGREDIENTS
2 lbs. chicken thighs, bone-in and skin-on (about 4 pieces)
1 tablespoon vegetable oil
1/2 tablespoon salt
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon Italian seasoning
1 teaspoon Worcestershire sauce or soy sauce (optional)
1 teaspoon balsamic vinega
INSTRUCTIONS
Place chicken thighs in a large sealable ziploc bag. Add oil and all seasoning. Seal the bag and shake well. Press the air out of the bag and make sure it’s tightly sealed. Press the seasoning around the chicken to coat (You can also marinate it in a bowl covered with plastic cling wrap). Place in the refrigerator and marinate for at least 1 hour, up to overnight.
When ready to cook, preheat the air fryer to 375F, about 5 minutes. Place the thighs (skin side up) in a single layer in the air fryer basket and cook for 25-28 minutes until the skin turns crispy and golden brown to your desired level of crispiness. The internal temperature for the chicken should reach 165F as read on a meat thermometer.
Serve immediately with your favorite side dish or veggies like Mashed Potatoes, Air Fryer Garlic Green Beans, or Air Fryer Broccoli.

1 cup creamy peanut butter
1/2 cup unsalted butter, softened
3-4 cups powdered sugar
1 teaspoon vanilla extract
Chocolate chips, for coating (optional)
Instructions:
Combine Ingredients: In a large bowl, cream together the peanut butter and butter until smooth. Gradually beat in the powdered sugar, one cup at a time, until a dough forms. Stir in the vanilla extract.
Shape the Balls: Roll rounded tablespoons of the mixture into balls.
Coat in Chocolate (Optional): Melt chocolate chips in a double boiler or microwave. Dip each ball into the melted chocolate and place on wax paper.

AIR FRYER DONUTS RECIPE

2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup granulated sugar
1/2 cup milk
1/4 cup applesauce (or melted butter)
1 large egg
1 tsp vanilla extract

Topping:

1/4 cup melted butter
1/2 cup granulated sugar
1 tsp ground cinnamon

Instructions:
Combine dry ingredients: flour, baking powder, baking soda, salt, and sugar.
Mix wet ingredients: milk, applesauce, egg, and vanilla.
Combine wet and dry ingredients until just mixed.
Roll dough to 1/2-inch thickness.
Cut out donuts with a donut cutter.
