HONEY GLAZED SALMON BOWLS WITH PEACH SALSA & CHIPOTLE SAUCE, an easy summer recipe that everyone will love, guaranteed / . I make salmon a lot in my house-it's my favorite, my kids eat it, and it's easy to find. For this recipe, I added a little summery spin by making a fresh peach salsa that adds the perfect amount of sweetness. I also made a quick homemade chipotle sauce to go on top, but it's totally optional or you can buy chipotle mayo from the grocery store. If you do make make the sauce, you can use leftovers as a salad dressing during the week :) Hope you love this recipe and tag me in your creations, I LOVE seeing them! Makes 4 servings 1 lb salmon, cubed 1 tb avocado oil 2 to honey 1 lime zest of the lime ½ tsp chili powder 1 tsp garlic powder 1 tsp paprika 1/2 tsp kosher salt Peach Salsa 2 peaches, diced 1 red bell pepper, diced 1 avocado, diced 1/3 cup red onion, diced 3 to cilantro, chopped 1 lime, juiced 1/2 tsp kosher salt Chipotle sauce (OPTIONAL) 3/4 cup greek yogurt 1 chipotle pepper in adobo sauce 2 tsp honey 1 tsp garlic powder 1/2 tsp smoked paprika 1/2 tsp kosher salt First, cut your salmon into cubes and add to a bowl. Toss with the avocado oil, honey, lime, lime zest and seasonings. Transfer to a foil (or parchment paper) lined baking sheet. Broil on high for 8 minutes then remove from oven and set aside. Cook rice and set that aside too. Next, make the peach salsa and chipotle sauce. For the peach salsa, simply chop all of the ingredients and add to a bowl. Toss with the lime and salt. To make the chipotle sauce, add all the ingredients to a small blender and blend until smooth. Finally, assemble your bowls, with the rice on the bottom, the salmon, peach salsa and chipotle sauce.
