Italian wedding soup
Ingredients (4 servings)
• ½ lb ground chicken or turkey (or pork/beef mix)
• ¼ cup breadcrumbs
• 1 egg
• 2 tbsp grated Parmesan
• 1 clove garlic, minced
• Salt & pepper
• 6 cups chicken broth
• 1 small onion, diced
• 2 carrots, diced
• 1–2 cups chopped spinach
• ½ cup small pasta (like orzo, or tiny shells)
Instructions
1. Make meatballs: Mix ground meat, breadcrumbs, egg, Parmesan, garlic, salt & pepper. Roll into small (teaspoon-size) meatballs.
2. Cook broth & veggies: In a large pot, sauté onion & carrots in a little olive oil. Add chicken broth; bring to a simmer.
3. Add meatballs: Drop meatballs into simmering broth; cook 8–10 minutes until they float & are cooked through.
4. Add pasta & greens: Stir in pasta; cook until tender. Add chopped spinach/escarole in the last 2 minutes.
5. Serve hot with extra Parmesan & cracked pepper.
