Peanut Butter Chocolate Granola

Ingredients:

2 cups whole oats

1/2 cup honey

1 cup peanut butter (smooth or crunchy)

1/2 cup sunflower seeds

1/2 cup flaxseed

1/2 cup dairy-free dark chocolate (chips or chopped)

1/2 cup raisins

Instructions:

1. Preheat oven to 325°F (160°C). Line a baking tray with parchment paper.

2. Mix wet ingredients: In a saucepan over low heat, gently warm the peanut butter and honey until smooth and combined. Stir continuously to avoid burning.

3. Combine dry ingredients: In a large bowl, mix the oats, sunflower seeds and flax seeds

4. Combine everything: Pour the warm peanut butter and honey mixture over the oats and seeds. Mix well until all oats are coated.

5. Bake: Spread the mixture evenly on the baking tray. Bake @ 325C for 20–25 minutes, stirring halfway through for even toasting. Keep an eye on it to avoid burning.

6. Cool down: Remove from the oven and let it cool completely. It will crisp up as it cools.

7. Add mix-ins: Once fully cooled, stir in the raisins and dark chocolate.

8. Store: Keep in an airtight jar or container for up to 2 weeks.

NO YEAST PUFF PUFF (Quick & Fluffy!)

Craving puff puff but don’t want to wait for yeast to rise? This no-yeast version is quick, easy, and delicious—perfect for busy days!

Ingredients:

2 cups self-rising flour

1/2 tsp cinnamon

1/4 cup sugar (adjust to taste)

2 cups vanilla-flavored yogurt (plain preferred for best results)

Instructions:

1. In a large bowl, mix self-rising flour, cinnamon, and sugar.

2. Add yogurt gradually and stir until you get a thick, smooth batter.

3. Heat oil in a deep pan over medium heat.

4. Scoop small portions of batter into the hot oil using a spoon or your hand.

5. Fry until golden brown on all sides.

6. Remove and drain on paper towels. Serve warm!

Soft, fluffy, and ready in minutes—no proofing required!

Made a very yummy Akara with a twist! I didn’t blend the pepper with the beans.

Here’s how I did it:

1. Soak beans & peel the skin

2. Blend beans with a little water (no pepper yet!)

3. Roughly blend onions & scotch bonnet separately

4. Mix onions & pepper into the blended beans

5. Add salt, seasoning & stir till fluffy

6. Fry in hot oil till golden brown

So crispy outside, soft & fluffy inside!
