Here is my latest brew - Spruce Touch.
I got the inspiration for this beer after tasting The Spruce Moose brewed by Beau's Brewery from Vankleek Hill, Ontario a few years ago. It is an American Pale ale brewed with spruce tips. I just loved the taste of the spruce in that beer. Very delicate but still present. I don't believe they are brewing it anymore. Too bad !!!
I just tried to retrieve the taste from memory and after a few tries, I am quite happy with the result. For the hops, I have used an unknown type that was growing in the back garden at my friends farm (by the way if you love lamb, you should visit them at https://www.createursdesaveurs.com/fr/ferme-les-peches-moutons in Bonsecours, QC) As a substitute, you could use Cascade hop.
The spruce tips were taken from the tree in my front garden. Here is the recipe for a 2.5 gallon batch with a 60 minute boil:

Grain Bill:
5.00 lbs - 2-Row Malt
0.25 lbs - 40L Caramel Malt
0.25 lbs - Flaked Oats

Hop Schedule:
1.00 oz Bonsecours Hop at 60 minutes
3.00 oz Spruce tips at 30 minutes

Yeast: Lallemand Nottingham

Original Gravity: 1.052
Final Gravity: 1.015
ABV: 4.8%

Here is our latest brew - White Dog IPA.
It is a white IPA. The recipe was taken from the Craft Beer & Brewing magazine which was shared by El Segundo Brewing Co from Los Angeles, California. It's the third time we are brewing this beer and we had excellent results. Here is the recipe for a 2 gallon batch with a 60 minute boil:

Grain Bill:
2.80 lbs - 2-Row Malt
2.40 lbs - White Wheat Malt
0.20 lbs - Rice hulls (into the mash to prevent a stuck sparge)

Hop Schedule:
0.40 oz Chinook at 60 minutes
0.40 oz Cascade at 5 minutes
0.40 oz Nelson Sauvin at 5 minutes
0.20 oz Chinook dry hop 7 days
0.40 oz Cascade dry hop 7 days
0.80 oz Nelson Sauvin dry hop 7 days

Yeast: Fermentis US-05

Original Gravity: 1.060
Final Gravity: 1.013
ABV: 6.2%

Note: We also brewed this beer with a Hallertau Blanc hop in place of the Nelson Sauvin with really good results.
