Here is my latest brew - Spruce Touch.
I got the inspiration for this beer after tasting The Spruce Moose brewed by Beau's Brewery from Vankleek Hill, Ontario a few years ago. It is an American Pale ale brewed with spruce tips. I just loved the taste of the spruce in that beer. Very delicate but still present. I don't believe they are brewing it anymore. Too bad !!!
I just tried to retrieve the taste from memory and after a few tries, I am quite happy with the result. For the hops, I have used an unknown type that was growing in the back garden at my friends farm (by the way if you love lamb, you should visit them at https://www.createursdesaveurs.com/fr/ferme-les-peches-moutons in Bonsecours, QC) As a substitute, you could use Cascade hop.
The spruce tips were taken from the tree in my front garden. Here is the recipe for a 2.5 gallon batch with a 60 minute boil:
Grain Bill:
5.00 lbs - 2-Row Malt
0.25 lbs - 40L Caramel Malt
0.25 lbs - Flaked Oats
Hop Schedule:
1.00 oz Bonsecours Hop at 60 minutes
3.00 oz Spruce tips at 30 minutes
Yeast: Lallemand Nottingham
Original Gravity: 1.052
Final Gravity: 1.015
ABV: 4.8%
