🌽 Popcorn wasn’t born in movie theaters…
It was popping over 9,000 years ago in ancient Mesoamerica.

Long before it became a movie-night snack, popcorn was part of rituals.
Bernardino de Sahagún, a 16th-century chronicler, wrote that toasted maize, called momóchitl, was scattered like hail in offerings to the gods of water and fishing.

What you enjoy today with butter and salt once had a different meaning.

Curious about how popcorn connects us to ancient traditions?

Have you ever read the label on the mustard in your fridge?

That yellow bottle lives on the fridge door, and we use it without thinking much - on burgers, dressings, salads, hot dogs...

But what’s really in it?

And what if I told you that making mustard at home is not only possible, but easier than you’d expect?

In this post, I compare homemade and store-bought mustard flavour, ingredients, cost, and practicality.
It’s not about doing everything from scratch, just being more aware of what’s in our food.

Water releases mustard’s sharp flavour, but it fades over time. Acids like vinegar preserve its spiciness! More acid makes it sharper for longer, and less acid creates a milder, quick-fading taste.

Did you know mustard gets milder when cooked? Heat destroys isothiocyanates, the compounds responsible for its spicy kick, giving it a softer taste perfect for sauces and marinades.

Water releases mustard’s sharp flavour, but it fades over time. Acids like vinegar preserve its spiciness! More acid makes it sharper for longer, less acid creates a milder, quick-fading taste.

Try our red cabbage pH experiment on the blog and learn how to test the acidity in your kitchen!

Do you know why mustard is spicy... and acidic?
Mustard seeds have a natural compound that releases their strong flavor when mixed with water. But here’s the thing: that spicy punch doesn’t last! To preserve its flavor, you need vinegar—and that’s why mustard is acidic. It's the vinegar that locks in the taste (and gives it that tangy kick).

But you don’t have to take my word for it… you can test it yourself!
We had so much fun at home making a pH indicator with red cabbage—yes, red cabbage!

Homemade vs. Store-Bought Mayonnaise: Is It Worth Making Your Own?

I ran a full cost, taste, and ingredient breakdown to see if homemade mayo is better than store-bought. The results? Homemade mayo costs 51% more than budget store brands but is slightly cheaper than Hellmann’s!

So… what’s the real deciding factor? FLAVOR. My homemade mayo had a fresher, richer taste. Even a kid could tell the difference! 😆

Would you try making your own mayo or is store-bought still your best choice? Read the full breakdown here:

La salade Olivier est bien plus qu'un simple plat : c'est un symbole d'adaptation et de résilience.

Chaque veille du Nouvel An, mon mari la prépare, et nos traditions se rejoignent autour de la même table. Pour lui, c'est un souvenir de son enfance en Ukraine ; pour moi, un lien avec les fêtes de mon enfance au Mexique. Et pour nos enfants, c'est le symbole de leurs racines partagées et la preuve que les traditions peuvent évoluer avec nous.

Olivier salad is more than just a dish—it’s a symbol of adaptation and resilience.

Every New Year’s Eve, my husband prepares it, and our traditions come together at the same table. For him, it’s a memory of his childhood in Ukraine; for me, a connection to my childhood celebrations in Mexico. And for our children, it’s a symbol of their shared roots and proof that traditions can evolve with us.
