What a fun time this series has been. Creating these dinners each week was such a fun experience. I can’t believe this was our final summer Friday - summer has absolutely flown by!!

This weeks Menu:
* ��Sunflower Seed Challah
* ��Roasted Golden Beet Hummus
* ��Roasted Golden Beet & Goat Cheese Salad with Citrus Ch*****ne Vinagrette
* ��Grilled Salmon w Lemon Caper Cream Sauce
* Grilled Summer Squash & Asparagus
* Creamy Mashed Potatoes
* ���Fresh Squeezed Lemonade
* Mom’s Banana Pudding

Citrus Ch*****ne Vinagrette:
1/3 cup citrus ch*****ne vinegar
2/3 cup olive oil
2 tbsp honey (more or less to taste)
1 tbsp Dijon mustard
Salt & pepper to taste

My mommy’s banana pudding ✨🥹 I’m homesick for my fam a lil bit right now.
This is my fav dessert my mom used to make when I was growing up. I used to beg her for bites of the fresh & warm pudding before she layered it with the bananas and nilla wafers. It’s just sooo comforting and yummy.

Taco Night in a ~ neurodivergent household~

ps I cut out the 3 mins of me explaining how red rice became a preferred food (nearly safe food!) of Ben’s because it was like 2 years in the making. Rice has always been a favorite of his, and it was a slow progress from plain rice - buttered rice - bone broth rice - rice pilaf - red rice then eventually red rice with the peas & carrots. He loves it now but it wasn’t always something he would eat every time, it was a slow and steady process of changing it little by little, having it as a no pressure option, eventually him trying the new way, liking it and then repeating the process.

Week 7 ~Berry Blessed~ // Themed Friday Night Summer Shabbat Dinners
It was a Berry Blessed shabbos indeed because my BIL&SIL were able to join us and they brought our sweet bb nephew for us all to cuddle which was such a treat! I always make too much food so the more the merrier duh!

This weeks Menu:

* Whipped Goat Cheese & Honey topped with EVOO, Balsamic Marinated Strawberries, basil & toasted Pine Nuts

TOTAL SAFE FOOD MEAL for my autistic 6yo (bc it’s just one of those weeks!)

Today’s meal: Miso soup, Costco yakisoba, edamame & some fresh fruits and veggies he typically loves!

Parenting an autistic non-speaker takes a lot of observation, patience, trial & error. He can’t tell me what he wants to eat so I have to guess a lot. (He has an AAC he just doesn’t use it reliably yet.) I feel like I’m always keeping mental tabs of what foods will eat, will sometimes eat, and won’t eat to plan his/our meals. Some weeks he will be in an adventurous mood and eat (or at least taste!) anything I offer, and others his eating is so unpredictable. I always offer safe foods on his plate even when he’s in an adventurous mood, but some weeks I can feel that he just wants his favorite, predictable foods so I don’t try anything new or frequently rejected foods.

My almost 3yo, on the other hand, can tell me what he wants, but only ever wants “pasta.” Haha But he usually will eat or at least try anything I make. HOWEVER he has my sweet tooth. I’m working on figuring out the best way to make sweets not an obsession. Ya know… “Normalize” them & not put them on a pedestal etc. The tips I used that worked on my older son seem to be having the opposite effect for him so… it’s a work in progress 😂 When I figure it out I’ll let you know what helped!

Parenting is such an adventure!!!

Last week’s Friday Night Shabbat Dinner was a DILLY GOOD THYME ✨From dill pickle challah, to dill pickle hummus and of course the apparent viral sensation - dill pickle lemonade??? Almost everything I made was on theme!! I tried my best to make a yummy corned beef brisket (which is basically pickled brisket I think) and all our favorite sides! Corned beef calls for rye, so I tried out a rye challah recipe that I made up and it actually worked? My matzo ball soup was loaded with dill, and my kids were ecstatic to have their favorite egg noodles with olive oil. I also made a berry & thyme cobbler (without the thyme on accident but it was actually on purpose)!

I absolutely loved this theme, and we had the best time! I already cannot wait for next week ✨

People often ask me how I have time to do this & the answer is I don’t 🙂😃
But it’s so fun and it brings me joy. Def more important than a perfectly spotless house right?
