Mufaraket batata. مفركة بطاطا. Dressed for dinner.
Every culture has worked out that if you combine eggs and potatoes, you get a great meal.
The way my grandma made was frying potatoes, then cracking a few eggs and scrambling them with the potatoes, then sprinkling sumac on top, and we eat it with pita bread.
Spain has tortilla española. Germany has bauernfrühstück. Switzerland has rösti. Colombia has changua.
My version: slightly thick potato slices, soft scrambled eggs, and instead of dusting sumac over the top I turned it into a crisp tuile. Finished with the parsley oil from a few videos back.
