His work today is rooted in zero-waste philosophy, fermentation, and a deeply technical approach to modern gastronomy 🥘 But his cooking is also shaped by something more personal: an enduring memory of 🇪🇨 ✨️ the warmth of cane juice, the rhythm of the trapiche, and the transformation of raw harvest into panela. A foundation that continues to inform his sense of flavour, seasonality, and storytelling.
