The Perfect Mini Lemon Donuts - Baked ๐
๐When Life Gives You Lemonsโฆ Make Donuts!
Ingredients
Dry Ingredients:
โข 210 g all-purpose flour
โข 30 g cornstarch
โข 1ยฝ tsp baking powder
โข 1 tsp salt
Wet Ingredients:
โข 150 g sugar
โข 1 tablespoon grated lemon zest
โข 28g melted butter
โข 2 large eggs
โข 180 g buttermilk
โข ยฝ tsp pure vanilla extract
โข 1 tablespoon freshly squeezed lemon juice
For the Glaze:
โข 200 g icing sugar
โข 2โ3 tablespoons freshly squeezed lemon juice

Instructions
1. Preheat your oven to 175ยฐC (350ยฐF). Lightly grease your donut pan or spray it with non-stick spray.
2. In a large bowl, combine the sugar and lemon zest. Mix well to release the lemon fragrance.
3. Add the melted butter to the sugar mixture and stir to combine.
4. Beat in the eggs, one at a time, mixing well after each addition.
5. Add the buttermilk, vanilla extract, and lemon juice. Stir until fully blended.
6. In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
7. Sift the dry ingredients into the wet mixture. Gently fold until just combined. Do not overmix.
8. Fill the donut pan about ยพ full in each cavity.
9. Bake for 7โ9 minutes, until the donuts spring back when lightly pressed. Avoid overbaking.
10. Allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack.
11. Prepare the glaze by mixing the icing sugar with 2โ3 tablespoons of lemon juice until smooth.
12. Decorate the donuts with the glaze and let them set.
