ASUN spaghetti is a Nigerian dish made by combining spaghetti with a spicy, flavorful goat meat known as "asun." Asun is traditionally a street food delicacy made by grilling or roasting goat meat with a spicy marinade, typically consisting of Scotch bonnet peppers, onions, and seasoning. How to Make ASUN Spaghetti
Ingredients:
Spaghetti
Goat meat (preferably with some fat)
Scotch bonnet peppers (ata rodo), chopped
Onions, sliced
Garlic, minced
Bell peppers, diced (optional)
Tomatoes, diced (optional)
Vegetable oil
Seasoning cubes or powder
Salt
Thyme
Curry powder
Bay leaves
Water
Instructions:
Prepare the Goat Meat:
Clean and cut the goat meat into bite-sized pieces.
Season the meat with salt, thyme, curry powder, and some minced garlic. Allow it to marinate for about 30 minutes.
Grill or roast the meat until it's tender and slightly charred. You can also pan-fry the meat if you don't have access to a grill.
Cook the Spaghetti:
Boil water in a large pot and add a pinch of salt and a few bay leaves.
Add the spaghetti and cook according to the package instructions until al dente.
Drain and set aside.
Make the Sauce:
Heat some vegetable oil in a large pan or pot over medium heat.
Add sliced onions and minced garlic, and sauté until fragrant.
Add the chopped Scotch bonnet peppers (adjust the quantity based on your heat tolerance).
If using, add diced tomatoes and bell peppers. Sauté until the tomatoes break down and the peppers soften.
Season with seasoning cubes/powder, curry powder, thyme, and salt to taste.
Combine:
Add the grilled or roasted goat meat (asun) to the sauce and stir to coat the meat well.
Finally, add the cooked spaghetti to the pan and mix everything thoroughly until the spaghetti is well coated with the sauce and the asun is evenly distributed.
Serve:
Serve hot, garnished with extra chopped peppers or onions if desired.
