3 and 1/2 cups (440g) all-purpose flour

1 cup (240ml) warm milk

1/2 cup (120ml) warm water

1 tbsp sugar

1 tbsp active dry yeast

2 tsp salt

2 tbsp vegetable oil or melted butter

Instructions:
Dissolve yeast and sugar in warm water and milk. Let sit 5–10 minutes.

Mix flour and salt in a large bowl.

Add yeast mixture and oil to flour, mixing into a soft dough.

Knead for 8–10 minutes until elastic.

Let dough rise in a greased bowl, covered, for 1 to 1.5 hours.

Divide dough into small pieces (80-100g), shape into rolls.

Let rise 30 minutes, then bake at 220°C (430°F) for 15–20 minutes.

Soft Homemade Bread
Ingredients:
4 cups (500g) all-purpose flour

2 tbsp sugar

2 tsp salt

2 and 1/4 tsp active dry yeast (1 packet)

1 and 1/4 cups (300ml) warm milk (about 40°C / 105°F)

1/4 cup (60g) unsalted butter, softened

1 large egg

Instructions:
In a small bowl, dissolve yeast and sugar in warm milk. Let it sit for 5–10 minutes until foamy.

In a large bowl, combine flour and salt.

Add yeast mixture, softened butter, and egg to the flour. Mix until a dough forms.

Knead on a floured surface for 8–10 minutes until smooth and elastic.

Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours until doubled.

Punch down the dough and shape into a loaf. Place it in a greased loaf pan.

Cover and let rise for another 30–45 minutes.

Preheat oven to 180°C (350°F).

Bake for 30–35 minutes until golden brown and sounds hollow when tapped.

Cool completely before slicing.

Classic Homemade French Bread (Pão Francês)
Ingredients:
4 cups (500g) all-purpose flour

2 tsp salt

1 tbsp sugar

1 tbsp active dry yeast

1 and 1/2 cups (360ml) warm water (about 40°C / 105°F)

Instructions:
Dissolve yeast and sugar in warm water. Let sit 5–10 minutes until foamy.

In a large bowl, mix flour and salt.

Add yeast mixture to flour and mix until a sticky dough forms.

Knead on a floured surface for 8–10 minutes until smooth and elastic.

Place dough in greased bowl, cover, and let rise 1–2 hours until doubled.

Punch down dough, divide into small portions (about 80g each), and shape into small rolls.

Place on baking sheet, cover, and let rise 30–45 minutes.

Preheat oven to 220°C (430°F).

Make a slit down the center of each roll with a sharp knife.

Ingredients:
1 and 3/4 cups (220g) all-purpose flour

2 cups (400g) granulated sugar

3/4 cup (65g) unsweetened cocoa powder

1 and 1/2 tsp baking powder

1 and 1/2 tsp baking soda

1 tsp salt

2 large eggs

1 cup (240ml) whole milk

1/2 cup (120ml) vegetable oil

2 tsp vanilla extract

1 cup (240ml) boiling water

Instructions:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.

Stir in boiling water (batter will be thin).

Pour batter evenly into pans.

Bake 30–35 minutes or until a toothpick inserted in the center comes out clean.

Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Frost with your favorite frosting.

Dulce de Leche
Ingredients:
1 liter (4 cups) whole milk

300g (1 ½ cups) sugar

1/4 tsp baking soda

1 vanilla bean (optional) or 1 tsp vanilla extract

Instructions:
In a heavy-bottomed saucepan, combine milk, sugar, and baking soda. If using a vanilla bean, split it and scrape the seeds into the milk, then add the pod too.

Heat over medium heat, stirring constantly until sugar dissolves.

Lower the heat to medium-low and simmer gently, stirring frequently to avoid burning or sticking.

Continue cooking for about 1.5 to 2 hours until the mixture thickens and turns a rich caramel color. Remove the vanilla pod if used.

Stir in vanilla extract if you didn’t use a vanilla bean.

Let cool. The dulce de leche will thicken further as it cools. Store in a clean jar in the fridge.

1 cup (240ml) buttermilk

1/2 cup (120ml) vegetable oil

2 large eggs

2 tsp vanilla extract

1 cup (240ml) hot water or hot coffee

Instructions:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Add buttermilk, vegetable oil, eggs, and vanilla. Beat until smooth.

Gradually stir in hot water or coffee (batter will be thin).

Pour batter evenly into prepared pans.

Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.

Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.

Frost as desired.
