For the Cake:
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups mashed ripe bananas (about 3 bananas)
1/2 cup sour cream
1/4 cup whole milk
For the Cream Cheese Frosting:
1/2 cup (1 stick) unsalted butter, softened
8 oz cream cheese, softened
3 cups powdered sugar, sifted
1 teaspoon vanilla extract
For Garnish:
Sliced fresh bananas
Chopped walnuts (optional)
Directions:
Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and mashed bananas.
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and milk. Begin and end with the dry ingredients, mixing until just combined.

Ingredients:
For the Cupcakes:
95 grams (¾ cup) all-purpose flour
42 grams (⅓ cup) of unsweetened cocoa powder
¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
2 large eggs
100 grams (½ cup) granulated sugar
80 ml (⅓ cup) vegetable or canola oil
2 teaspoons pure vanilla extract
120 ml (½ cup) buttermilk, at room temperature
For the Fudge Frosting:
1 cup melted chocolate fudge
1-2 cups powdered sugar
3-4 tablespoons heavy cream

Instructions:
1. Preheat oven to 175°C (350°F) and line a cupcake tray with paper liners.
2. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
3. Add egg, milk, oil, and vanilla. Mix until smooth.
4. Slowly add hot water (or coffee) and stir until the batter is thin and glossy.
5. Pour into cupcake liners, filling each about ⅔ full.
6. Bake for 18–20 minutes or until a toothpick comes out clean.

• 1 cup (125g) all-purpose flour
• ½ cup (50g) unsweetened cocoa powder
• ½ tsp baking soda
• ¼ tsp salt
• ½ cup (115g) unsalted butter, melted
• ¾ cup (150g) brown sugar
• ¼ cup (50g) white sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 cup (170g) chocolate chips



💫 Instructions:
1. Preheat oven to 175°C (350°F) and line a baking tray with parchment paper.
2. In a bowl, mix dry ingredients — flour, cocoa, baking soda, and salt.
3. In another bowl, whisk melted butter with both sugars until smooth.
4. Add egg and vanilla, mix well.

• 2 tbsp caramel sauce (from the filling)

For the crust:
• 1 ½ cups (190g) all-purpose flour
• ½ cup (100g) sugar
• 1 tsp baking powder
• 1 egg
• ½ cup (115g) unsalted butter, softened

For the filling:
• 2 cups (500g) Quark (or use ricotta/cream cheese mix if unavailable)
• ¾ cup (150g) sugar
• 3 large eggs
• 1 tsp vanilla extract
• 1 cup (240ml) sour cream
• 2 tbsp cornstarch
• Zest of 1 lemon (optional)



Instructions:
1. Preheat oven to 175°C (350°F). Grease a 9-inch (23cm) springform pan.
2. Prepare the crust:
• In a bowl, mix flour, sugar, and baking powder.
• Add butter and egg, then mix until a dough forms.
• Press the dough evenly into the bottom and slightly up the sides of the pan.
3. Make the filling:

Ingredients;
225 g self-raising flour
2 tsp baking powder
225 g unsalted butter, room temperature
225 g caster sugar
Four large eggs, lightly beaten
120 g raspberry jam
150 ml double cream, whipped to soft peaks

Instructions:
1. Preheat oven to 180°C (350°F). Grease and line two 20 cm (8-inch) round cake tins.
2. Cream butter and sugar together until light and fluffy.
3. Add eggs one at a time, beating well after each addition. Mix in vanilla if using.
4. Sift in flour and baking powder, then gently fold until combined. Add milk if needed for a smooth consistency.
5. Divide the mixture evenly between the two tins and smooth the tops.
