Banana Bliss Cake with Velvety Cream Cheese Frosting 😋💕
Ingredients:
For the Cake:
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups mashed ripe bananas (about 3 bananas)
1/2 cup sour cream
1/4 cup whole milk
For the Cream Cheese Frosting:
1/2 cup (1 stick) unsalted butter, softened
8 oz cream cheese, softened
3 cups powdered sugar, sifted
1 teaspoon vanilla extract
For Garnish:
Sliced fresh bananas
Chopped walnuts (optional)
Directions:
Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and mashed bananas.
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and milk. Begin and end with the dry ingredients, mixing until just combined.
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Make the Frosting:
In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating until light and fluffy. Stir in the vanilla extract.
Assemble the Cake:
Place one cake layer on a serving plate and spread a thick layer of frosting on top.Repeat with second layer.Place third layer on top and frost the entire cake, smoothing the sides and top.
Decorate and Serve:
Garnish the cake with sliced bananas and chopped walnuts for a stunning finish. Slice and serve immediately, or refrigerate until ready to enjoy.
Helpful Tips:
To prevent sliced bananas from browning, brush them lightly with lemon juice before garnishing.
For added texture, fold 1/2 cup of chopped walnuts into the cake batter.
