What You’ll Need:
3–4 lb beef chuck roast
Salt and black pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp dried thyme or rosemary
1 tsp smoked paprika (optional)
8–10 strips of bacon
2 tbsp olive oil or butter
Optional Extras:
1 onion, sliced
2–3 garlic cloves, smashed
1 cup beef broth
How to Make It:
Preheat your oven to 325°F (165°C).
Pat the roast dry, then rub it with all your seasonings.
In a hot skillet, sear the roast on all sides until it’s nicely browned.
On a cutting board, lay out the bacon strips and place the roast on top. Wrap the bacon around the roast snugly.
Place the wrapped roast back in your skillet or Dutch oven. Add the onions and garlic if using, then pour in the broth.
Roast for about 2.5 to 3 hours, or until it’s tender and cooked to your liking.
Let it rest for 15 minutes before slicing. Spoon the juices over the top for extra flavor.
