➡️🌟Hoy queríamos recordar “Un siglo en las grandes mesas” en el Restaurante Cabanas, la última de las comidas con las que la DOCa Rioja () quiere celebrar su presencia en la alta gastronomía durante los últimos cien años, junto a destacados sumilleres.

En esta ocasión Carlota Iglesias, sumiller del restaurante ubicado en Lalín, en la provincia de Pontevedra, ha hecho una selección de vinos para mostrar su visión de la historia de esta denominación de origen.

➡️🌟Today we wanted to look back on ‘A century at the finest tables’ at Restaurante Cabanas, the last in a series of meals with which the DOCa Rioja () aims to celebrate its presence in haute cuisine over the last hundred years, together with leading sommeliers.

On this occasion, Carlota Iglesias, sommelier at the restaurant located in Lalín, in the province of Pontevedra, has made a selection of wines to showcase her vision of the history of this designation of origin.

➡️🌟💬The first talk of the Cava Meeting 2025 conference: The excellence of the Traditional Method. New developments and future challenges. International experts from universities and different sparkling wine regions around the world presented the latest developments and challenges in the production of sparkling wines using the traditional method.

🥂Charles Zuker, Professor of Biochemistry, Molecular Biophysics and Neuroscience at Columbia University (USA), explored how the sense of taste works. On the tongue, the five basic tastes have different taste receptor cells, each tuned to a single taste quality. In the cerebral cortex, each taste quality is represented in its own independent cortical field.

🥂With Gabriel Lepousez, neurobiologist and researcher at the Pasteur Institute, we delved into our sensory brain to understand how CO₂ acts as a multisensory molecule, stimulating all our senses, and how prolonged ageing on lees develops a rich complexity through the remarkable release of umami compounds.

🥂Cristina Mercuri, founder of Mercuri Wine Club (Italy), has revealed to us the universe and evolution of Franciacorta, from its comparison with champagne to showing a designation that is totally rooted in its own territories, thanks to new zoning that highlights the differences in soils and microclimates.

🥂Pere Pons Mercadé, professor at Rovira i Virgili University and oenologist at Cava Miquel Pons, focused on all the processes that occur during the ageing of Cava and how these changes translate into organoleptic characteristics.

➡️🌟Javier Pagés, president of the DO CAVA, opened this major international event dedicated to Cava by emphasising the excellence of Cava, a historic wine with 150 harvests behind it, linked to the territory, local traditions and grapes, and to a method, the traditional method, which is exclusive to very few regions in the world. A sparkling wine that has evolved, with the creation of categories such as Cavas de Guarda Superior, which are the focus of this event, without losing its identity, looking to the world but maintaining its roots, and which is undoubtedly a faithful representative of that Mediterranean lifestyle that defines us so well.



➡️🌟Javier Pagés, presidente de la DO CAVA, ha inaugurado este gran Encuentro Internacional en torno al Cava recalcando la Excelencia del Cava, un vino histórico, con 150 vendimias a sus espaldas, vinculado al territorio, a las tradiciones y uvas locales y a un método, el método tradicional, exclusivo de muy pocas regiones del mundo. 🥂Essi Avellan MW. She is Finland’s first Master of Wine and an expert on sparkling wine. She has been honoured with the title of Chevalier de l’Ordre du Mérite Agricole in France. Author and editor of key reference works in the world of wine, she organises the annual Grand Champagne Helsinki event and is a highly respected judge at major international wine competitions.

➡️🌟Tasting | Cava & Sherry. The magic of oxidation and limestone. A tasting where we will pair DO Cava with Sherry Designations of Origin, discovering that they have much in common, through a pairing with Iberian ham.

Ferran Centelles will lead the tasting, with:

🥂Robert Tetas. Robert trained as a sommelier at the University of Girona before working at El Celler de Can Roca under Pitu Roca’s guidance. Runner-up in the Catalonia Sommelier Championship in 2017 and finalist in the 2018 Best Sommelier of Spain competition, he was named Best Sommelier of Andalusia in 2021 by newspaper¬ABC. In 2018, together with Camila Ferraro, he founded Sobretablas restaurant in Seville.

🥂Albert Tomás. Albert Tomás grew up learning about every aspect of the family business, building a global vision and solid experience in the sector. In recent years, his role has become increasingly important, and he now heads the company as CEO. Passionate about the world of wine, he has promoted projects such as Maridaje, a red wine created to pair with ham.

Sara Jane Evans MW will lead the tasting, with:

🥂Roberto Durán MS. After studying economics, he discovered that his true calling was sommeliery. The first Spanish Master Sommelier, he has also won the title of Best Sommelier in Spain. Roberto has worked in haute cuisine restaurants such as Miramar, Mirror, Joël Robuchon Singapore and 67 Pall Mall Singapore, where he is currently Head Sommelier.

The future perspective and commitment to the region will be discussed, as well as the desire to work together to safeguard the vineyards of Penedès.

➡️🌟 Panel discussion | The business of Cava. A round table discussion to discuss the present challenges and future solutions for the cava business.

The table will be moderated by María Naranjo, accompanied by the speakers:

🥂Xavier Ybargüengoitia. With a degree in Economics and a diploma in Financial Management and Management Control, among other qualifications, Xavier was president and CEO of “Estates & Wines, The Moët Hennessy Wine Division” for more than a decade, until his retirement. He currently teaches at Rovira i Virgili University and the Wine Business Schoo

🥂Jordi Paronella. He discovered after studying Hospitality and Restaurant Management that his true calling was the wine, leading him to complete his training at the d’Espielles School of Oenology. He has worked as a sommelier in Abac, Moo and Cal Xim. In 2013 he became Lead Sommelier for José Andrés’s Spanish concepts, and since 2020 he has served as the group’s wine director.

🥂Laura Williamson MS. She is one of 36 women Master Sommeliers in the world. During her career, she has directed Italian and German wine imports across the US and worked as Beverage Director at some of New York’s most award-winning establishments. She has also an adjunct faculty member of the Culinary Institute of Education (ICE) in New York.

🥂Harriet Kininmonth. With over 15 years in the UK wine trade and a an extensive experience sourcing from both classic and emerging regions, she has held senior roles at Enotria and C&C Group, judged DWWA and IWC, and champions authentic Spanish wines and their growth in the UK market.

New developments and future challenges”, a talk led by in which international experts from universities and different sparkling wine regions around the world will present the latest developments and challenges in the production of sparkling wines using the traditional method. The participants are: 🥂Charles Zuker. A distinguished Chilean molecular geneticist and neurobiologist, he is a professor of Biochemistry, Molecular Biophysics and Neuroscience at Columbia University. A Howard Hughes Medical Institute investigator, his research has transformed our understanding of the sense of taste in mammals.🥂Gabriel Lepousez. PhD in Neuroscience, he works as a research scientist at the Perception and Action Laboratory at the Pasteur Institute in Paris. Passionate about wine, he is a member of the tasting committee of La R***e du Vin de France and the Académie du Vin de France, applying his knowledge of neuroscience to understand how the taste of wine is formed in our brains.🥂Cristina Mercuri. A renowned Italian wine educator, Cristina Mercuri serves as an international judge, presenter and wine editor for Forbes. A former lawyer, she holds the WSET Diploma and is currently in the third stage of the Master of Wine programme. She is one of the most popular Italian wine personalities on Instagram.🥂Pere Pons. Son of a family of farmers, he has always been involved in the world of wine, linked to the family winery, where he is the winemaker. After studying Biotechnology at the University of Barcelona, he completed two master’s degrees in Oenology at the Rovira Virgili University and the University of Bordeaux. 🥂Pedro Ballesteros MW. Committee chair. He will moderate two round tables in which he and various winemakers will attempt to answer the question of whether the CAVA DO is just a business or also a commitment. They will discuss future prospects and commitment to the region, as well as the desire to work together to safeguard the vineyards of Penedès.

🥂Ferran Centelles. Drinks Manager at ElBulliFoundation y responsable de vinos de España en Jancis Robinson. He will lead a tasting session in which the DO CAVA will be paired with the Denominations of Origin of the Marco de Jerez, in order to discover what they have in common, accompanied by Iberian ham. Robert Tetas, sommelier at the Seville restaurant Sobretablas, and Albert Tomás, CEO of Enrique Tomás ham shops, will also be in attendance.

🥂Sarah Jane Evans MW. Together with Roberto Durán, head sommelier at 67 Pall Mall Singapore, she will lead a tasting session featuring a selection from a collection of Cavas de Guarda de Paraje Calificado to showcase the richness, diversity, identity and uniqueness of these unique vineyard cavas.
