Mafaldine pasta: a new discovery. Hailing from Naples, these curly-edged tendrils are destined to be tossed about the pot with wild mushrooms, woody rosemary, garlic and caramelised onion, slick with a Sherry and Chianti reduction, with just a touch of cream and shavings of Grana Padano cheese.
