Quick and easy stuffed mushrooms – perfect for starters, parties, or cozy nights in!
Let’s get this party started… one stuffed mushroom at a time! 🎉
What You’ll Need & How to Make it:
Ingredients: • 4 large mushrooms • 1/4 each of red and green bell pepper (finely chopped) • 4 baby tomatoes (chopped) • 2 eggs • A handful of baby spinach leaves (chopped) • Olive oil • Black pepper • Turmeric • Chicken stock powder • Garlic powder • Feta cheese • Greek yogurt • Fresh parsley (for garnish)
Instructions: 1. Brush the mushrooms (inside and out) with olive oil. Season with black pepper and turmeric. 2. Chop all the vegetables into small pieces. 3. In a bowl, whisk the eggs and add all the chopped veggies. 4. Season the mixture with chicken stock powder and garlic powder. Mix well. 5. Stuff the mushrooms with the egg and veggie mixture. 6. Crumble feta and a little Greek yogurt evenly on top of each mushroom. 7. Air fry at 180°C (356°F) for 15–20 minutes, until cooked and golden.➡️ No air fryer? No problem! You can bake them in a preheated oven at 180°C (356°F) for about 20–25 minutes.
8. Garnish with freshly chopped parsley.
