Made Arroz a la Cubana today and it brought me straight back to mom’s cooking. 🥹🍽️

Steamed white rice, ground pork in tomato sauce with garlic, onions, carrots, potatoes, and raisins, a sunny-side-up egg, and my little UK twist: banana panko instead of saba—had to improvise since we don’t have plantains here!

Sweet, savory, crunchy, and comforting. Just like home, even far from it. 💛

Fun fact: Arroz a la Cubana isn’t actually Cuban—it’s a Filipino-Spanish dish that became a classic in many Pinoy homes.
