🤓 Anatomy of a cake.

The big, blowsy decorated cakes tend to get all the attention. But I'm fond of a cake pared back to its bones. There's nowhere to hide.

The cake - perfectly domed.

Flavour - zingy, gently floral. The top layer doubling down with lemon drizzle.

Texture - sponge, soft with plum juice. Fruit with a little bite and a little jamminess, holding it all together.

Details - those little sprigs of lavender are doing a lot of work.

Lemon, lavender & plum birthday cake. Precisely the sum of its parts.

All that said, if anyone needs a big, blowsy cake now - I'm ready to let rip. 😊

When you order a cake from me, I’ll ask you three things: when you need it, how many people are eating it, and what flavours you like - or don’t.

This one had a gorgeous autumn-y brief: lemon, lavender and plum. No cream.

So the plums got busy.

Some sliced and roasted, to create structure. Others simmered down to something softer and jammy. The resulting crimson juices were used to brush the cake layers.

Pretty, isn’t it?

And this is just the bit in the middle. 🎂

And you own a bright red anorak.
