🍫 Chocolate Rice Cake Cups 🍫

These cups are so delicious, naturally vegan, gluten-free, and the perfect healthier treat when you’re craving something sweet.

You’ll need:

🤎 8 plain rice cakes
🤎 100g maple syrup
🤎 80g peanut butter
🤎 180g dark cooking chocolate
🤎 24g chopped hazelnuts

Method:
1. Add the rice cakes to a blender and pulse until you reach your desired crumb consistency.
2. Stir in the maple syrup and peanut butter until everything is well combined.
3. Press the mixture firmly into muffin tins or silicone cupcake moulds.
4. Melt the dark chocolate over a bowl of simmering water (double boiler method) until smooth.
5. Pour the melted chocolate over each rice cake cup.
6. Sprinkle the chopped hazelnuts on top.
7. Place in the freezer for 1–2 hours, or until the chocolate is fully set.

Keep in the fridge for up to 5 days or freeze for up to 3 months.

Oat bites packed with good carbs and healthy fats. Gluten-free, vegan, and the perfect snack when you’re looking for a healthier option that keeps you satisfied throughout the day.

The below recipe makes 12 bites:

You’ll need:

- 150 g oats
- 230 g dates (pitted)
- 80 g smooth peanut butter
- 160 g dark chocolate

1. Blend the oats, dates, and peanut butter in a food processor.
2. Add a little water and blend again until you get a smooth, mouldable mixture.
3. Divide the mixture evenly into 12 cupcake cases. I lined mine with small strips of baking paper so they’re easy to lift out once set.
4. Bake at 160°C for about 20 minutes (fan)
5. Let them cool completely.
6. Melt the dark chocolate over a bowl of simmering water (or however you prefer).
7. Spoon the melted chocolate over each bite and sprinkle with a little flaky salt if you like.
8. Put them in the fridge until the chocolate has fully set.

Keep them in an airtight container in the fridge for 5 days or freeze them for up to 3 months.

Nutrition (per bite):
- 200 calories
- 25 g carbs
- 9 g fat
- 4 g protein

Spicy sourdough focaccia is absolutely amazing 🌶️

Golden, fluffy, and perfectly chewy, with just the right amount of heat in every bite.

You’ll need:

• 500g bread flour
• 380g warm water
• 100g active sourdough starter
• 10g salt

Garlic Butter

• 50g butter, melted
• parsley (handful/ chopped)
• 5 garlic cloves (minced)

Toppings:

Pepper
Rosemary
Chilli 🌶️

⏰ The Night Before

Mix warm water and sourdough starter together, then add bread flour. Cover and rest for 30 minutes. Add salt and knead the dough. Over the next 2 hours, stretch and fold every 30 minutes to build gluten structure, covering the bowl in between. Place dough into an airtight container and leave overnight at room temperature.

☀️ The Next Morning

Grease a baking pan with olive oil. Turn dough onto a lightly floured surface, add garlic butter and shape into a rectangle.

Cover with a towel and leave at room temperature for about 2 hours until puffy.

Add pepper, rosemary and chilli.

Bake at 220°C for about 27 minutes until golden!

Finish with Parmesan if you like, and serve warm 🤍

What can be better than a brownie or a tiramisu? A Tiramisu Brownie!

The rich, fudgy brownie base paired with coffee-soaked ladyfingers and a creamy mascarpone topping gives this dessert that extra oomph. Trust me, it’s irresistible!

You’ll need:

Brownie Layer

• 2 eggs
• 90g caster sugar
• 110g brown sugar
• Pinch of salt
• 50g olive oil
• 60g butter
• 120g chocolate
• 20g cocoa powder
• 80g plain flour
• ½ tsp baking powder

Tiramisu Layer

• Ladyfingers
• 150g coffee (cooled)
• 250g mascarpone
• 200g double cream
• 50g icing sugar
• ½ tsp vanilla extract
• Cocoa powder for dusting

Method

- Whisk together the eggs, caster sugar, brown sugar, salt, and olive oil until well combined.

- Melt the butter and chocolate together, then stir in the cocoa powder.

- Pour the chocolate mixture into the egg mixture and mix until smooth.

-Fold in the flour and baking powder until just combined.

- Line a baking tray with baking paper and bake at 175°C (top and bottom heat) for 20–25 minutes. Leave to cool completely.

- Briefly dip each ladyfinger into the coffee—just a second or two so they don’t become soggy.

- Arrange the coffee-soaked ladyfingers over the cooled brownie.

- In a bowl, whisk together the mascarpone, double cream, icing sugar, and vanilla extract for 3–5 minutes until thick and creamy.

- Spread the mascarpone mixture over the ladyfingers and dust generously with cocoa powder.

- Refrigerate for at least 3 hours, but ideally overnight for the best flavour and texture.

Serve, slice, and enjoy every bite! ☕🍫🤎

🍪 Triple Chocolate Cookies 🍪

Makes approximately 12 cookies

You’ll need:

* 250g plain flour
* 30g cocoa powder
* ¾ tsp salt
* ½ tsp baking soda
* 230g butter, softened
* 200g caster sugar
* 50g brown sugar
* 1 egg
* 1½ tsp vanilla extract
* 115g milk chocolate chunks
* 60g dark chocolate chunks

Method

1. In a bowl, whisk together the flour, cocoa powder, salt, and baking soda.
2. In a separate large bowl, beat the butter for 1 minute until smooth.
3. Add the caster sugar and brown sugar, then mix for 2–3 minutes until light and creamy.
4. Add the egg and vanilla extract, mixing until fully incorporated.
5. Gradually add the dry ingredients and mix until just combined.
6. Fold in the milk and dark chocolate chunks.
7. Divide the dough into 85g portions and roll into balls.
8. Place 4–6 dough balls on a lined baking tray, allowing space for spreading.
9. Bake at 180°C for 12–15 minutes.
10. Allow the cookies to cool on the baking tray for 10 minutes before transferring them to a wire rack.

These cookies are rich, chocolate-forward, and perfectly sweet.

You’ll need:

• 500g bread flour

• 50g grated cheese

Garlic Butter

• 50g butter, melted
• parsley (handful/ chopped)
• 5 garlic cloves (minced)

Leave some for the glaze.

⏰ The Night Before

Mix warm water and sourdough starter together, then add bread flour. Cover and rest for 30 minutes. Add salt and raisins and knead the dough. Over the next 2 hours, stretch and fold every 30 minutes to build gluten structure, covering the bowl in between. Place dough into an airtight container and leave overnight at room temperature.

☀️ The Next Morning

Grease a baking pan with olive oil. Turn dough onto a lightly floured surface, add grated cheese and shape into a rectangle.

Cover with a towel and leave at room temperature for about 2 hours until puffy.

Mix butter, parsley, and garlic together. Spread a portion over the dough.

Bake at 220°C for about 27 minutes until golden!

Finish with a garlic glaze drizzle and serve warm 🤍
