Here's a simple and delicious recipe for preparing Peppered Chicken.
🍗 Ingredients:
For Boiling the Chicken:
1 kg chicken (drumsticks or parts of your choice)
1 onion (sliced)
2 seasoning cubes (e.g., Knorr or Maggi)
1 tsp thyme
1 tsp curry powder
Salt to taste
1 cup water
For the Peppered Sauce:
5-6 red chili peppers (ata rodo / scotch bonnet)
2 medium red bell peppers (tatashe)
2 medium tomatoes (optional, for less heat)
1 onion (chopped)
2 cloves garlic (optional)
1-inch piece of ginger (optional)
1 seasoning cube
Salt to taste
1 tsp paprika (optional)
1/2 cup vegetable oil
🔪 Instructions:
Step 1: Boil the Chicken
1. Wash and clean your chicken thoroughly.
2. Put it in a pot, add sliced onions, curry, thyme, seasoning cubes, and salt.
3. Add about 1 cup of water.
4. Cover and boil on medium heat until fully cooked and the water is reduced (about 15–20 minutes).
5. Optionally, grill or fry the cooked chicken for extra crispiness.
Step 2: Make the Pepper Sauce
1. Blend the red chilies, bell peppers, tomatoes (if using), garlic, and ginger roughly. Don’t make it too smooth.
2. In a frying pan, heat the oil.
3. Add the chopped onions and fry for 2–3 minutes.
4. Add the blended pepper mix and stir.
5. Fry the sauce on medium heat for 10–15 minutes, stirring occasionally, until it thickens and the oil floats on top.
6. Add seasoning cube, salt, and paprika. Adjust seasoning to your taste.
Step 3: Mix Chicken with Sauce
1. Add the boiled (or fried/grilled) chicken into the sauce.
2. Stir and let it simmer for another 5–10 minutes so the chicken soaks in the pepper sauce.
✅ Tips:
If you like it very spicy, add more scotch bonnet.
For a smoky flavor, grill the chicken before adding to the sauce.
Serve with jollof rice, fried rice, yam, plantain, or as a party finger food.
