Masala Omlette
4 eggs
3 tbsp milk
1/2 tsp chilli flakes
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp fresh chillies
2 tbsp red/green pepper, cut into chunks
2 tbsp red onion, chopped finely
2 tbsp spring onions, chopped
Chopped coriander
2 tbsp butter
Salt and black pepper
In a bowl,crack some eggs, pour in a little milk, pinch of salt, chilli flakes, turmeric powder, cumin powder, sprinkle over with spring onions, chopped fresh chillies, chopped coriander, also peppers and red onions or any veg really. Mix everything.
Melt some butter in a pan and pour in the mixture, cook until done.
Moongh Dhal
Ingredients π
1 cup moong dhal, par-boil
1 onion chopped
1 tsp garlic & ginger paste
1 tsp chilli paste
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp whole cumin
Salt to taste
1 tbs oil
1 tbs ghee
1 small fresh tomato (skin removed)
Chopped coriander for garnish
Method π
Soak dhal for an hour or so and par-boil.
In a pan drizzle oil, add ghee, whole cumin, onions and sautΓ©.
Then add in garlic and ginger paste, chilli paste, chopped tomato, coriander and cumin powder, turmeric powder and salt.
Stir in and cook for about a minute so the spices mix in nicely.
Once the tomatoes soften throw in your dhal.
Pour in 1/2 cup of water and cover and cook on low heat till dhal is done.
It should soft but not mushy.
Sprinkle over coriander.
Masala Beans
Ingredients π
1 tin of baked beans
2 tbsp oil (Add less if you prefer)
1/2 tsp cumin seeds
1 tbsp tomato puree
1 small onion, chopped finely
1/2 tsp chilli powder
1/2 tsp cumin powder
1/2 tsp turmeric powder
Chopped coriander for garnish
Methodπ
In some oil, sizzle cumin seeds, for about 20 seconds, and fry onions until golden.
Add tomato puree, chilli powder, cumin powder, turmeric powder, and chopped garlic and mix.
