Vegetable Soup Recipe
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
2 carrots, diced
2 celery stalks, chopped
1 zucchini, diced
1 bell pepper, chopped
1 can diced tomatoes
4 cups vegetable broth
Salt and pepper to taste
Fresh herbs (parsley, thyme) for garnish
Instructions:
Heat olive oil in a large pot over medium heat.
Sauté onion and garlic until translucent.
Add carrots, celery, zucchini, and bell pepper; cook for 5-7 minutes.
Pour in diced tomatoes and vegetable broth.
Bring to a boil, then reduce heat and simmer for 20-30 minutes.
Season with salt, pepper, and herbs.
Serve hot with bread or crackers.
