Bombay Biryani recipe,,😋😋
Ingredients:
For the basmati rice:
- 2 cups basmati rice
- 4 cups water
- 1 tablespoon ghee or oil
- 1 teaspoon salt
For the marinade:
- 1 pound lamb or chicken, cut into small pieces
- 1/2 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh cilantro
For the biryani masala:
- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon cinnamon sticks
- 2-3 green cardamoms
- 2-3 cloves
- 1 bay leaf
For the onions and spices:
- 2 large onions, thinly sliced
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds
- 1 teaspoon turmeric
- 1 teaspoon red chili powder
- Salt, to taste
For layering:
- Fresh cilantro, chopped
- Fresh mint leaves, chopped
- Fried onions (optional)
Instructions:
1. Prepare the basmati rice: Rinse and soak the rice for 30 minutes. Drain and cook with ghee, salt, and water until 70% done. Drain excess water and set aside.
2. Marinate the meat: Mix the meat with yogurt, ginger-garlic paste, cumin powder, coriander powder, turmeric, red chili powder, salt, lemon juice, and cilantro. Let it marinate for at least 2 hours or overnight.
3. Prepare the biryani masala: Dry roast the coriander seeds, cumin seeds, cinnamon sticks, cardamoms, and cloves. Grind into a fine powder.
4. Cook the onions and spices: Heat ghee or oil in a pan and cook the sliced onions until golden brown. Add cumin seeds, coriander seeds, fennel seeds, turmeric, and red chili powder. Cook until fragrant.
5. Cook the marinated meat: Heat oil in a pan and cook the marinated meat until it's cooked through.
6. Layer the biryani: In a large vessel or handi, layer the cooked rice, meat mixture, and fried onions. Sprinkle biryani masala, chopped cilantro, and mint leaves. Repeat the layers.
7. Dum (Steam) the biryani: Cover the vessel with a tight-fitting lid or dough seal. Cook on low heat for 15-20 minutes or until the flavors meld together.
8. Serve: Gently fluff the biryani and serve hot, garnished with chopped cilantro, mint leaves, and fried onions.
