Hi everyone, I’m Claire Lancaster, strategist on the WGSN Food & Drink. This week, I’m highlighting micro-bakeries – the small, social media-led businesses meeting demand for artisanal baked goods and set to impact baking going forward 🍰

First up is Kora. This NYC-based online doughnut business, from pastry chef Kimberly Camara, is highlighting demand for global flavours with ingredients like pili, a rich and buttery tree nut indigenous to the Philippines, and mora, a unique type of blackberry also known as the Andean raspberry. Native to Latin America, it brings a sweet, tart bite that balances the pili’s richness

Next, Hong Kong-based Babababagels, offering homemade, made-to-order bagels with premium ingredients. This eye-catching matcha bagel is upgraded with wakatake matcha from Japan, which creates a naturally alluring colour and flavour profile with both sharp bitterness and smooth sweetness.

Finally, San Francisco-based Rize Up Bakery Inspired by the Black Lives Matter movement, chef Azikiwee Anderson founded the bread business with a focus on representation, community and unconventional flavour. Sews without skipping a stitch, without breaking the threads, without breaking the needle and without deforming the needle tip. 4. Sews materials up to 9 mm thick with a needle bar stroke length of 32 mm. 5. Sews various materials without adjusting the normal tension of the top and bottom threads. 6. Allows switching from the normal new type 401, where the top thread loop is tightened strongly, to the elastic new type 401, where the top thread loop is tightened weakly, without adjusting the normal tension of threads using know-how. 7.
