Simple Tomato Dip!

Panjeeri! (panjiri)

2 cup clarified butter /ghee

½ cup edible gum /goond katira / char goond

8 cup Lotus/ ferox seeds / phool makhaney

½ cup almonds

½ cup cashews

½ cup walnuts

¼ cup pistachios

½ cup coconut slices

½ cup pumpkin seeds / khadu kay beej

½ cup melons seeds /char magaz

½ cup flax seeds / Alsi k Beej

2 cup semolina

2 cup jaggery or shakar

⅔ cup water

4 tbsp kamarkas / butea frondosa

2 tbsp fennel seeds

Sarsoon Ka Saag with Makai ki Roti

Sarson ka Saag Ingredients:
500 g Mustard leaves (sarson)
300 g Spinach
200 g Bhathau / Wild spinach
100 g Fenugreek leaves
1 litre Water
Salt to taste
1 tbsp crushed chillies
6 galic cloves
2 inches ginger
3-4 Green chillies
2 tbsp Cornmeal / makai ka aata

For tadka:
3 tbsp Ghee
2 tbsp garlic slices
1 tbsp ginger julienne cut
5-6 dried red chillies
3-4 green chillies

Makai ki Roti Ingredients ;
3 cups Cornmeal / makai ka aata 2 cup
1 tsp Ghee
1 & 1/2 cup hot boiling water

Thoroughly wash all the leaves and Roughly chop .
In a pot add leaves slowly , pour water and reduce down. And keep adding.
Crush the garlic ginger and green chillies and add to the saag along with salt & crushed chillies. & continue cooking without covering until saag is properly cooked.
Start muddling with a mathani , add the cornmeal and mix well while muddling until the texture will turn creamy & smooth
For tarka , add ghee, add garlic, and ginger and cook until slightly golden brown then add dried red chillies and green chillies. ,
Add to the saag stir and cook for 2-3 minutes.

For makai ki roti.
In a bowl add hot boiling water, stir in ghee, , after slowly add the cornmeal and keep mixing until all flour mixed.
Cover and leave for 20 minutes.
After Knead to form a soft dough.
Cover and Let the dough rest for 15 minutes. Make dough ball gently and wet hands if needed.
I am using roti presser here. Place the dough and gently press it according to your preference thickness of roti.Cook the roti until one side has brown spots on it and then flip and cook the other side as well. Keep pressing the roti maker gently to give heat on both sides.

600 g chicken breast

500 g chicken thighs

4 tsp salt

2 tsp sugar

1 tsp MSG

4 tsp garlic powder

4 tsp onion powder

2 tsp paprika

4 tsp black pepper

2 egg

2 cup plain flour

2 cup cornflour
