Pulao Biryani!
1kg Chicken
4 ½/ cup Rice
4 Cloves Garlic
3 inches Ginger root
7 Green chilies 3 crushed, remaining for topping
3 tbsp Biryani Masala recipe already uploaded
½ cup Yogurt
2 Tomato
1 for gravy, 1 for topping
12 pes Dried plums
¼ cup coriander Chopped
¼ cup mint chopped
7 Lemon slices
2 Onions medium, for frying
½ cup Ghee
2 tsp Salt
1 tsp Crushed chillies
1.5 litres water

Place a big pot over medium heat.
Heat up the oil or ghee in a pot.
Thinly slice the onions and fry until golden brown. Take out the fried onions. Spread on paper towel to make it crispy.
Crush the garlic, ginger and green chillies.
Add the chicken in remaining ghee, add crushed ginger garlic and green chillies.
Add biryani masala. I am adding my homemade biryani masala (recipe already posted here). And cook on high heat until it changes colour. It will take around 4-5 minutes.
Add in the whisked yogurt and give it a mix.
Also, add salt and crushed chillies according to your taste.
Cover with lid and cook until chicken is half tender
In the meanwhile, wash rice and soak for 30-40 minutes.
After that add sliced tomatoes and dried plums.
Mix well and slightly reduced the water until gravy is thickened.
Once gravy is ready, topped with sliced tomatoes, sliced lemons, chopped coriander & mint and green chillies.
Pour water and bring it to boil. Make sure don't stir at this point.
Add the pre soaked rice, cover and cook on high heat for 7-8 minutes until almost all water dries up.
Remove the lid, sprinkle red and yellow food colour.
Add fried onions and some mint leaves.
Place on dum on low heat for 15-20 minutes.
Mix the rice and serve with raita. Enjoy
