Tender pork ribs cooked in a spicy Goan masala with coconut vinegar and potatoes, then pressure-cooked until the meat is soft and succulent.
Perfect with rice or pão. ❤️
Ingredients:
700 g pork ribs, cleaned and cut into pieces
20 dried Kashmiri chillies, washed
5 green chillies, slit
1 teaspoon cumin seeds
20 whole cloves
25 black peppercorns
1 cinnamon stick, approximately 3 inches long, broken into pieces
1½ teaspoons turmeric powder
15 garlic cloves
2-inch piece fresh ginger, roughly chopped
150 ml coconut vinegar
100 ml water, for grinding the masala
Salt, to taste
2 medium onions, sliced
Approximately 50 ml oil, for sautéing the onions
3 medium potatoes, peeled and cut into pieces
Note: Add water to the curry as needed, depending on the consistency you prefer.
Pressure cooker note: I used a Prestige pressure cooker. I first pressure-cooked the pork ribs for 4 whistles, then added the potatoes and cooked for another 2 whistles — 6 whistles in total. Cooking time may vary depending on the make and type of pressure cooker you use.
Enjoy! 😊
