200g wide rice noodles
350g chicken breast, diced
2 tbsp sesame oil (divided)

1 cup fresh Thai basil leaves
Salt and black pepper, to taste

Sauce:
2 tbsp oyster sauce
80ml tamari (or soy sauce)

2 tbsp water

Method:
Cook the noodles: Prepare the wide rice noodles according to the package instructions. Drain and set aside.
Make the sauce: Mix the oyster sauce, tamari, fish sauce, maple syrup, water, and chilli paste in a bowl. Set aside.
Cook the chicken: Heat 1 tbsp of sesame oil in a large frying pan or wok over medium heat. Add the diced chicken, season with salt and black pepper, and cook until golden brown. Remove from the pan and set aside.
Sauté the vegetables: In the same pan, add the remaining 1 tbsp of sesame oil. Sauté the shallots, garlic, carrots, and red bell pepper for about 5 minutes until softened.
