Ingredients
For the Chicken:
π 2 large chicken breasts
π Juice and zest of 1 lemon
πΏ 2 tbsp olive oil
π§ 2 cloves garlic, minced
πΏ 1 tsp dried oregano or thyme
π§ Salt & pepper to taste
For the Salad Base:
π₯¬ 4 cups mixed greens (romaine, spinach, or arugula)

1 cup cherry tomatoes, halved
π₯ 1/2 cup cucumber, sliced
π₯ 1 avocado, sliced
π₯ 1/4 cup shredded carrots
π½ 1/4 cup corn kernels (grilled or fresh, optional)
For the Lemon-Herb Dressing:
π 2 tbsp olive oil
π Juice of 1 lemon
π§ 1 clove garlic, minced
π― 1 tsp honey or Dijon mustard
π§ Salt & pepper to taste
πΏ 1 tbsp chopped fresh parsley
Instructions
1οΈβ£ Marinate and Grill the Chicken:
In a bowl, whisk together lemon juice, lemon zest, olive oil, garlic, oregano, salt, and pepper. Add the chicken breasts, coating them well, and let marinate for at least 20 minutes.
Heat a grill or skillet over medium heat. Cook the chicken for 4-5 minutes per side, or until fully cooked. Let the chicken rest for 5 minutes before slicing.
2οΈβ£ Prepare the Salad Base:
In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, shredded carrots, and corn (if using).
3οΈβ£ Make the Lemon-Herb Dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, garlic, honey, salt, pepper, and parsley until well combined.

Divide the salad base into individual bowls. Top each bowl with sliced grilled chicken and avocado slices.
