Greek Chickpea & Avocado Salad with Lemon Feta Dressing

Ingredients:

For the Salad:

1 (15 oz) can chickpeas, drained and rinsed

1 large avocado, diced

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, thinly sliced

1/4 cup kalamata olives, halved

1/4 cup crumbled feta cheese

2 tbsp fresh parsley, chopped

For the Lemon Feta Dressing:

2 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp lemon zest

1 clove garlic, finely minced

2 tbsp crumbled feta cheese

1/2 tsp dried oregano

Salt & pepper to taste

Directions:

Make the Dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, lemon zest, garlic, feta, oregano, salt, and pepper until well combined. Set aside.

Assemble the Salad:
In a large bowl, combine chickpeas, avocado, cherry tomatoes, cucumber, red onion, olives, and parsley.

Ingredients:
- 250g (8.8 oz) Cream cheese 🧀
- 100ml (3.4 oz / ⅓ cup) Milk 🥛
- 50g (1.7 oz / ¼ cup) Unsalted butter 🧈
- 4 large Egg yolks 🥚🥚🥚🥚
- 40g (1.4 oz / ⅓ cup) Cake flour 🍰
- 15g (0.5 oz / 2 tbsp) Cornstarch 🌽
- 1 tsp Vanilla extract 🌿
- 1 tbsp Lemon juice 🍋
- 60g (2.1 oz / ⅓ cup) Granulated sugar 🍬
- 4 large Egg whites 🥚🥚🥚🥚
- 60g (2.1 oz / ⅓ cup) Granulated sugar 🍬
- Hot water
- Parchment paper

Directions:
1. Preheat the oven to 325°F (160°C) and line the bottom of a 9-inch round springform pan with parchment paper.
2. In a large bowl, beat cream cheese, milk, and butter until smooth.
3. Add egg yolks one at a time, mixing well after each addition.
4. Sift in cake flour and cornstarch, then add vanilla extract, lemon juice, and granulated sugar. Mix until well combined.
5. In a separate bowl, whip egg whites until foamy, then gradually add sugar and continue to beat until stiff peaks form.

Ingredients:

2 oz vodka (any brand you like)

1/2 cup fresh or frozen strawberries

1 oz fresh lemon juice (about half a lemon)

1 oz simple syrup (adjust to taste)

1/2 cup lemonade (store-bought or homemade)

Ice (crushed preferred, for the layered look)

Instructions:

Make the Strawberry Puree:

Instructions
Cook the Asparagus – Heat a skillet with olive oil over medium heat. Sauté asparagus for 3–4 minutes until tender-crisp. Season lightly with salt.

1 small ball of burrata cheese

1 tbsp balsamic glaze (or reduction)

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Grill the Flatbread:
Heat a grill pan or skillet over medium-high. Lightly brush the flatbread with olive oil and grill until charred in spots and warm (about 2–3 mins per side). Set aside.

Directions:

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together the ground pistachios, flour, baking powder, baking soda, and salt. Set aside.
