If you dig a shallow hole near the ocean, line the bottom with dry grass or straw. When the tide comes in, let seawater fill the hole. Then, under the wind and strong sunlight, the water slowly evaporates, leaving behind highly concentrated salty water.

Next, strain the water to remove dirt and debris. Pour it into a clay pot and heat it over a low flame. As the water evaporates, a thin layer of salt will start forming on the surface. Keep stirring it so the salt doesn’t stick to the bottom.

As more water disappears, large white salt crystals begin to form. Once a thick layer of salt settles at the bottom, turn off the heat. Remove the crystals and place them in a bamboo basket to let the extra water drain out.

But this raw salt still contains impurities, which can give it a bitter or unusual taste. So, the salt is dissolved in water again and carefully strained. A small amount of wood ash is then added and mixed well. After sitting for a while, some impurities settle at the bottom.

The mixture is strained again, leaving only the salty water. This water is then slowly boiled until it completely evaporates, producing cleaner salt crystals.

Finally, spread the salt out in a well-ventilated place and let it dry completely. Once dry, store it in a clay container with a lid.

And that’s how salt is traditionally made from seawater.
