Tips for freezing vegetables.
1. Blanch Before Freezing (Optional but Recommended)
• Slice the vegetables
• Bring water to a boil and add a pinch of salt.
• Blanch slices for 2–3 minutes, then immediately plunge into ice water.
• Drain and pat dry before packing into bags.

2. Portion Control
• Freeze in meal-sized portions to avoid thawing and refreezing, which makes the texture mushy.
3. Use Airtight Bags/Containers
• Remove as much air as possible from freezer bags to prevent freezer burn. A vacuum sealer works best, but pressing out air by hand helps too.
4. Lay Flat When Freezing
• Spread the slices in a thin, flat layer before freezing.
• Once solid, you can stack the bags neatly and save space.
5. Label Clearly
• Write the date and contents on the bag. Frozen bitter melon is best used within 6–8 months for peak quality.
6. Avoid Refreezing
• Once thawed, don’t refreeze—it degrades texture and taste.
