The recipe in Sally's Kitchen this week is Bailey's Coffee Cake. Could be a great alternative to Christmas Cake or a Yule Log. Find out more on Wednesday at 12.30 on 107.8 Academy FM.

Bailey’s Coffee Cake

Ingredients:
Cake:
200g butter
180g Brown sugar
3 eggs
125 ml Bailey's
2 tbsp instant coffee
240g self-raising flour
Icing:
80g Butter
200g icing sugar
2 tbsp Bailey's

Method
Preheat oven to 180°. Grease and line a 2 lb loaf tin
Dissolve instant coffee in a quarter cup of boiling water. Set aside.
In a stand mixer, by hand or using beaters, cream the butter and sugar until smooth.
Beat in eggs one at a time. Add coffee mixture and Bailey's and beat again.
Add flour and fold through until just combined.
Pour into the prepared tin and bake for 35 to 40 minutes until cooked. Allow to cool.

To make the icing, beat the icing ingredients until smooth. Spread over cold cake

Serves 10
