Attempt 2 at lentil bread. Success finally!
The first attempt was edible but had a texture like meatloaf- fine but not what you want from a bread.
This is much better.
I'm using up stuff from the freezer for lunches this week so no late night cooking.

Another late post ( i was a bit too efficient and deleted the original photo I took of my meal prep this week 😂🤦‍♀️)
Still really struggling with my energy levels- I feel like i slept most of this weekend. I had so many ideas but my body had other ideas.
This week I've got: white beans ( canellini) in tomato sauce with rice.
I'll keep you all updated, I can't wait to get back online- i want to offer a Friday morning Fitness Pilates class- just like the old days 🫶 i miss our Friday morning classes! Plus start working on a class i want to put together for my horror movie fans- I'll ( all things in my favour) be offering a trial of this, Halloween weekend. More to come on that soon! 🤘💪🏼

A slightly later food post. I've been trying a few things out recently in terms of strategies, seeing as I'm not able to exercise much myself at the moment.
Tonight, for dinner, I made an omelette but added extra egg whites to increase the protein without adding huge amount of calories.
I made lunch for the next 3 days too- sticky rice, spinach and tuna. 2 in the buffalo sauce ( Greek yoghurt and gochujang) and the third in a mixture of gochujang, maple syrup, Japanese rice vinegar , ginger and garlic pastes and tamari.
Both topped with chilli oil.

No reel this weekend, I've been trying to get things back to normal after Bloodstock Festival last weekend. Meal prep galore tonight. Bag of salad, 2 packs of shredded chicken, a bag of tenderstem broccoli and 2 bags of cubed butternut squash.
Sauces: takeaway style buffalo sauce- 3tbs 0% Greek yoghurt, 1.5tbs gochujang . Topped with a chilli oil sauce i made last night which has rice vinegar, tamari and maple syrup in to use it up.
Mediterranean style: 3tbs 0% Greek style yoghurt, garlic powder, Italian herbs and 1tbs lemon juice

Having health issues that exercise makes worse at the moment so doing light exercise until i have these more under control.

So I've been really busy the last few days...making goodie bags/ survival kits for the festival. I've obviously made loads 😂
They're to give out to our camp neighbours etc and anyone who might like one.
I'm really proud of the thought and effort I've put into them

Lunch this week: crispy Mexican rice and beans 😊
My flat smells of paprika right now 😂 unsurprisingly, going off the colour in the pan.
Quick, nutritious, filling and actually pretty easy to make.

After an intense couple of days I got out for a nice walk and came home to my mat and inexpensive bits of kit. I'm always impressed how much you can do with such small pieces of equipment. The burn is real today 😂 PilatesxStrength sessions evolve and get tougher.
