CHILLI PESTO CHICKEN PASTA 🌶️

Genuinely one of my fave easy pastas I’m actually suprised I’ve not filmed this one yet!! So quick and easy but tastes unreal! I do prefer with different pasta but works well with any!!

Ingredients:
2 chicken breasts
1/2 onion
2 cloves garlic
Handful sliced plum toms
2tsp chilli paste
4tsp red pesto
1tbsp light soft cheese
2/3 ladles pasta water
160g pasta
Drizzle olive oil
A little parmesan
Seasonings:
Paprika, garlic powder, salt, pepper

NOURISHING CHICKEN ORZO SOUP 🍲

485 CALS + 36G PROTEIN PER SERVING

This is so full of flavour and packed with nutrients. It’s high in protein and collagen from the bone broth and feels like a literal hug in a bowl. I had mine for lunch and 3 portions left for meal prep.

Ingredients (3-4 portions):
4 bone in chicken thighs
2 carrots
1 large leek
4 sticks celery
1 clove garlic
160g orzo
1tbsp olive oil
Salt
Pepper
2tsp dried thyme
750ml chicken bone broth

Method:

Add carrots, celery and leeks to a pan with a little oil. Cook until softened, then add garlic, salt, pepper and dried thyme. Cook for a further few minutes.

Add the chicken thighs to the pan, along with the stock and 2 sprigs of thyme. Cook on low for mins.

Remove the thighs and take the meat from the bone. Discard of the bones and return the chicken to the pan along with the orzo. Cook for 5 minutes.

Serve with a dollop of crème fraiche and a drizzle of olive oil and enjoy!♥️

ONE PAN CHICKEN HAM + LEEK PIE 🥧

I feel like everyone needs a one pan pie recipe and this is THE best one pan pie. I’ve been making this for years and it will never not amaze me how easy but amazing it is. I’ve made a few healthier swaps, but you genuinely can’t tell and packed it with leeks so it’s nourishing too.

Ingredients:
4 chicken thighs
2 gammon steaks
500ml chicken stock
1/4 cup flour
2 leeks
1/2 onion
3 cloves garlic
2tbsp light crème fraiche
1tsp wholegrain mustard (optional)
Salt and pepper
1 roll puff pastry
1 egg (beaten)
Dried thyme
Extra virgin olive oil

Method:
Fry off the chicken and gammon until cooked/browned and remove from the pan.

Add leek, onion and garlic to the pan and cook until softened. Season with salt, pepper and dried thyme and cook for a further few minutes. Then add the flour and cook out for 2 more mins.

Add the chicken stock and reduce for a few minutes, then add crème fraiche and reduce until the mixture is thick and creamy.

Cut the puff pastry into shapes and layer over the pie then brush with egg wash. Bake at 180 for 18-20 mins. Serve with creamy mash and enjoy! ♥️

ITALIAN BEEF POTATO BAKES 🍅🥔

400 CALS + 32G PROTEIN PER PORTION

These are soo good! I’ve used potato rather than pasta because they have a higher water content, meaning they’re much lower calorie per gram and soo much more filling. Pls no Italians come for me 😂😂

Ingredients (3-4 servings):
500g 5% fat beef mince
3 medium potatoes (sliced)
1 tin chopped toms
440ml water
1 beef stock pot
1 onion
3 carrots
1tsp garlic puree or 2 cloves garlic
2tbsp tomato puree
50g reduced fat grated cheese
Salt and pepper

Method:
Thinly slice potato then drizzle with olive oil and season with salt. Bake for 20 minutes at 180.

Meanwhile, fry off the onion and carrot for a few minutes before adding the garlic puree, cook for 2-3 minutes.

Add the beef mince along with the tomato puree and cook for a further few minutes.

Then add the tinned toms, water and beef stock pot and simmer for 10 minutes.

Layer the potato and beef mixture then top with cheese and bake until golden.

BREAKFAST PREP BURRITO 🌯

Honestly these are SO good!! They’re super filling, high protein and honestly so tasty. If you do like a sauce with your brekky you could defo add this too. Toasting the burrito stops the wrap going soggy so don’t skip this step!

Ingredients (makes 3):

3 chicken sausages
4 eggs
6 hash browns
3 protein wraps
3 light cheese slices

CREAMY GARLIC AND TOMATO KING PRAWN TAGLIATELLE

My go to one pan pasta for when I want something quick and simple. Genuinely SO easy but sooo good!!

Ingredients:
Cooked king prawns
180g tagliatelle
500ml chicken stock
1 punnet plum tomatoes
5 cloves garlic
1/2 onion
Handful finely chopped parsley
1tbsp tomato puree
2tbsp Philly
Seasonings:
1tsp garlic powder
Salt and pepper
1tsp paprika
1tsp mixed herbs

VIRAL COTTAGE CHEESE MEATBALL GNOCCHI 🍅🌿

I turned the viral hailey bieber cottage cheese meatballs into a one-pan gnocchi dinner and it was so bloody good 🤭 soo easy to make and even easier to clean up. Also a whopping 52g protein per portion!!

Ingredients (serves 3):
1 bag gnocchi
1 jar tomato pasta sauce (I bulk made mine a few weeks - lmk if you want the recipe as it’s super easy, but you could also just use shop bought)
500g chicken mince
1tsp garlic powder
1tsp onion powder
1tsp Italian herbs
1 egg
2 tbsp breadcrumbs or panko
1 tub cottage cheese
Handful fresh basil
Parmesan

Method:
Combine the chicken mince with garlic powder, onion powder, Italian herbs, breadcrumbs and one egg then roll into equal meatballs. Fry in a little oil until golden, then add a lid and cook for a further 5 minutes. Then remove from the pan.

To the same pan, add the gnocchi and fry until a little crispy. Then add the tomato pasta sauce and return the meatballs to the pan. Pop a lid on and cook for a further 10 minutes. Add the fresh basil and stir through.

Add the cottage cheese along with lots of Parmesan and some fresh basil leaves and serve. Enjoy!
