CHIPOTLE BEEF LOADED BAKED SWEET POTATOES 🍠🌶️🥑

560 CALS + 38G PROTEIN

Literally obsessed with loaded baked sweet potatoes atm so thought I’d share one of my faves🤤🤤 healthy, high fiber and high protein 🫶🏼🫶🏼

Ingredients (serves 3-4 - I had one half, my partner had 2):
For the beef:
400g 3% fat beef
1 1/2 tsp chipotle
1tsp paprika
2tsp chipotle seasoning
1/2 beef stock with 300ml water
1tbsp tomato puree
1tbsp honey
Salt and pepper
1/2 onion
1 red pepper
3 cloves garlic

2 sweet potatoes
Jalapeños (optional)
2 handful 50% less fat cheese
2tbsp light crème fraiche or sour cream
1/2 mashed avocado
1/2 lime

SPICY TUNA SUSHI BITES 🍣🥑

The lazy girl sushi I have on repeat. So easy and if you’re a sushi lover like me this is the perfect easy lunch. I also made extra for lunch prep this week 🫶🏼

You will need:
2x sticky rice (I just used microwave)
2 tins tuna
1 avocado
1/2 tsp chilli oil
1tbsp light mayo
1tsp siracha
Siracha mayo (garnish)
Sesame seeds (garnish)

TORTILLINI PASTA SALAD

The PERFECT dinner for this heatwave!! Add any pasta/veggies you like, you could even add some protein. Also love this for hosting! Looks like you put in wayyy more effort than you actually did 😍😍

Dressing:
1tsp red pesto
1tbsp balsamic vinegar
1tsp honey
1tbsp extra virgin olive oil
Salt + pepper

- use any tortellini, veggies/salad + add a protein if you fancy.
- works well with burrata, mozzarella, feta or Parmesan.

SINGAPORE CHICKEN CHOW MEIN

470 CALS + 50G PROTEIN PER PORTION!

Guys this was SO GOOD!! Tastes EXACTLY like my Chinese order but so much lighter. Super savoury with a little kick from the curry powder, this dish is honestly packed with flavour! I used chicken here but you could literally use whatever you have in!

Ingredients (serves 3):
For the chicken:
2 chicken breasts
1tsp curry powder
1tsp dark soy
1tsp light soy
1/2 tsp white pepper
For the sauce:
3tbsp dark soy sauce
3tbsp shaoxing rice wine (mirin or sake work too)
3tsp curry powder
1tsp sugar

1 red pepper (or any veggies you have in)
Handful mushrooms
Tenderstem broccoli
1/2 onion
3 cloves garlic
3 eggs
2 handful beansprouts
Pack cooked vermicelli rice noodles
Drizzle avocado oil

Method:
Scramble some egg in a pan and set to one side.

Then cook the chicken and set to one side.

Cook the veggies, then add back in the chicken and egg along with some beanspouts if you have some.

Add the noodles and sauce and combine for 2-3 minutes.

Serve and garnish with spring onion and chilli oil and enjoy!!

CREAMY CHIPOTLE CHICKEN + BACON PASTA SALAD

475 CALS + 45G PROTEIN PER PORTION

Honestly this flavour combo was so so good, the jalapeños and corn go so so well with the smoky chipotle flavour and then the saltiness from the bacon is just 10/10. Perfect meal prep or bbq side dish.

Ingredients (3-4 portions)
For the chicken:
2 chicken breasts
1tbsp chipotle seasoning
1tsp paprika
1tsp all purpose seasoning
Drizzle avo oil

200g wholewheat pasta (or normal pasta)
2 rashers bacon medallions
Cup sweetcorn
Cup chopped jalapeños
1 pepper
3tbsp Greek yog
2tbsp light mayo
1tsp all purpose seasoning
2tsp paprika
1tsp chipotle paste (or seasoning)
100ml jalapeño pickle

CRISPY HONEY SOY + SESAME CHICKEN

When I tell you this actually tastes better than takeaway. Honestly so so good! Much lower calorie but just as satisfying, high in protein and so tasty!!

Ingredients (serves 2):
2 chicken breast
1 onion
2 cloves garlic
Tenderstem broccoli
Pack sticky or jasmine rice (i always use veetee)
Sesame seeds (optional)
5 tbsp cornflour
1 egg
Splash soy sauce
For the sauce:
2tbsp dark soy sauce
2tbsp light soy sauce
1tsp sesame oil
2tbsp honey
50ml water
1tsp cornflour

Method:
Combine the chicken with egg, add a splash of soy. Then coat each piece in cornflour, spray in a little oil and airfry for 10-12 mins at 195 degrees.

In a pan, cook the onion for a few mins, then add the garlic. Once the chicken is cooked, add to the pan along with the sauce.

Serve over sticky rice and enjoy!♥️

CHILLI-LIME KING PRAWN + MANGO SALSA RICE BOWL

Such a quick, easy dinner but wowww this was so so good!! So summery and fresh 😍

Ingredients:
1 pack jasmine rice (I always use veetee)
Handful sliced lettuce
Drizzle Siracha mayo
For the salsa-
1 mango
1/2 avocado
1 medium tomato
1/2 lime juice
1/2 red onion
1tbsp chopped corriander
1/2 tsp chilli flakes (optional)
Salt
For the prawns:
King prawns (Aldi frozen are the best iykyk)
1tsp paprika
1tsp smoked paprika
1/2 tsp chilli flakes
1tsp all purpose seasoning
1 clove garlic
1tbsp avocado oil
Salt and pepper
1/2 lime juice

Method:
Prep and wash the prawns. Add the oil, paprika, smoked paprika, chilli flakes, garlic and salt and pepper and set to one side.

Prep the salsa by dicing everything and combining with lime juice, chilli flakes, corriander and a little salt.

Then, cook the prawns for a few minutes on each side and add a squeeze of lime. They will be completely pink once cooked.

Serve the prawns over sticky rice with a little lettuce, the mango salsa, a wedge of lime and a drizzle of Siracha mayo and enjoy! ♥️

Lots of you asked for the recipe for this one so here you go! This is my cod taco glow bowl

I served mine with corriander rice and a creamy avo + jalapeño lime salsa verde and it was delish. Honestly so so easy and just the freshest summery dish 🤤🤤

Ingredients (serves 2):
For the cod-
2 cod loins
1tbsp Cajun
1tbsp Fajita seasoning
1tsp paprika
Drizzle avo oil
1 green chilli
1tbsp chopped corriander

For the salsa verde-
1/2 avo
1tbsp pickled jalapeños
2tbsp jalapeño pickle
2handfuls corriander
1/2 lime
1/2 tsp salt
3tbsp 0% fat crème fraiche

For the rice-
250g cooked rice
Handful corriander
1/2 lime

Garnishes:
2tbsp Pickled red cabbage
4tbsp Black beans or kidney beans
1/2 avocado

Method:
Prep all the garnishes first. Blitz the salsa verde and chop the chilli and corriander.

Coat the cod in all the spices and oil, then pan fry for a few minutes on each side. Ensure the pan is hot to get that lovely char.

Combine cooked rice with lime, corriander and season.

Serve and enjoy!♥️
