AD 🕷️✨These are the cookies for the spooky season!
These Incredibly indulgent chocolate chip cookies are made with Extra Virgin Olive Oil and a little bit of sparkle
The olive oil’s kind of the secret here! It keeps them gooey for days and gives the chocolate this deep, rich flavour. They’re utterly delicious, and so much fun to make! And there’s so many ways you can get creative with those fabulous spiders!
✨Ingredients
- 100g dark chocolate, melted
- 50g dark chocolate, roughly chopped
- 100ml Extra Virgin Olive Oil
- 50g dark muscovado sugar
- 60g golden caster sugar
- 1 egg, lightly beaten
- 200g plain flour
- 1 tsp bicarbonate of soda
To decorate:
- 50g white marshmallows
- 30g dark chocolate
- 10 small chocolate balls
- Edible gold shimmer powder
🍪 To make the cookies
1. In a mixer, whisk together the olive oil, both sugars, and the egg until smooth and glossy.
2. Stir through the melted chocolate and chopped chocolate until fully combined.
3. Fold in the flour and bicarbonate of soda
4. Roll into even balls, and space them well apart on a lined baking tray
5. Bake at 180°C (fan 160°C) for 16-18 minutes, until the tops are cracked and the edges are set. Let them cool completely before decorating
🕷️ To decorate
1. Add some shimmer powder and the chocolate balls to a jar and shake well until they’re golden, set aside
2. Melt the marshmallows in a microwave for a few seconds - they’ll start expanding when they’re ready
3. Leave it cool a little (it will firm quickly so heat again if it gets tacky) and use your fingers to wrap ‘cobwebs’ over the cookies. It’s messy, but worth it! Place a gold chocolate ball onto each one
4. Melt the chocolate and leave to cool slightly, and then use a nozzle and a piping bag to pipe the legs. Pop in the fridge for 5 minutes to set
5. Mix edible shimmer powder with a drop of water to create a paste, and brush onto each leg!
