🥗 Grilled Chicken and Guacamole Bowl
🍗 Ingredients:
For the Grilled Chicken:

2 boneless, skinless chicken breasts (or thighs)

2 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cumin

Juice of 1 lime

Salt & pepper to taste

For the Guacamole:

2 ripe avocados

1 small tomato, diced

1/4 red onion, finely chopped

1 tbsp chopped cilantro

Juice of 1 lime

Salt to taste

Bowl Base & Toppings:

2 cups cooked brown rice or quinoa

1 cup black beans (drained and rinsed)

1 cup corn (grilled or sautéed)

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta or cotija cheese (optional)

Fresh cilantro, lime wedges for garnish

🔥 Instructions:
Marinate the Chicken:
In a bowl, combine olive oil, garlic, paprika, cumin, lime juice, salt, and pepper.
Add chicken and coat well. Let it marinate for 15–30 minutes.

Grill the Chicken:
Grill over medium-high heat for 6–7 minutes per side, or until cooked through.
Rest for 5 minutes, then slice.

Make the Guacamole:
In a bowl, mash the avocados and mix in diced tomato, red onion, lime juice, cilantro, and salt.
Taste and adjust seasoning if needed.

Assemble the Bowls:
In each serving bowl, layer:

A scoop of rice or quinoa

Black beans and corn

Sliced grilled chicken

Cherry tomatoes

A generous spoonful of guacamole

Sprinkle of feta or cotija (if using)

Finish:
Garnish with extra cilantro and a wedge of lime. Serve immediately!

🌶️ Optional Add-ons:
Sliced jalapeños for heat

A drizzle of chipotle mayo or sriracha

Pickled red onions

Shredded lettuce or cabbage for crunch
