Crispy Fragrant Eggplant Dragon😋
Here is a general guide on how to perform the cut:
Prepare the eggplant: Use a long, slender eggplant variety. Wash it and trim the stem and end.
Score one side: Place the eggplant on a cutting board. Using a sharp knife, make closely spaced diagonal cuts along the length of the eggplant, cutting about three-quarters of the way through to the other side, but not all the way through.
Flip and score the other side: Carefully turn the eggplant over. Make a second series of diagonal cuts, this time perpendicular to the first set of cuts, again cutting about three-quarters of the way through. This cross-hatch pattern allows the eggplant to expand and curl when cooked.
Cook: The scored eggplant is typically deep-fried or braised, which causes the cuts to open up and create the "dragon scale" appearance.

You can make your own sauce, like sweet sour or sweet only, deep fry with cornstarch coat 😋😊
