I am so freaking frustrated!!! Why can't I peel a hard boiled egg to save my life?! I cook until just under hard according to my eggy timer. The yellows are perfect. I drain and put immediately into an ice bath. Some are peeled hot, some are peeled cooled, some are cold. No difference. How do I get a smooth peel?!

2 large cucumbers, peeled and chopped
1 cup fresh lemon juice (about 4-5 lemons)
1/2 spoon honey ( adjust to taste)
4 cups cold water
Ice cubes
Lemon slices and cucumber rounds for garnish
Procedure:
1. In a blender, puree the cucumbers until smooth.
2. Strain the cucumber puree through a fine mesh sieve into a pitcher.
3. Add the fresh lemon juice and honey (or sugar) to the pitcher, stirring until well combined.
4. Pour in the cold water and mix well.
5. Serve over ice cubes and garnish with lemon slices and cucumber

Made my first Fall soup from scratch; Butternut squash, sweet potato, and carrot soup. It was a little condensed so we could thin it with cream as we wanted. But it turned out amazing. We used warm cheese bread to dip in. Roasted all my veggies at 425° for an hour, blended with broth, cream, spices, and then cooked on the stove top for 25 mins. Added in chili flakes for a small kick at the end.
EDIT: WOW, I had no idea this little post would really blow up! Y'all are TOO KIND! Being commonly asked is what the original recipe called for. (I followed loosely and seasoned to my taste )
✓5 cups butternut squash
✓2 sweet potatoes
✓Handful of carrots (I added the onion, garlic, tomatoes on my own)
✓2 Tsp Nutmeg
✓2 Tsp cinnamon
✓Salt/pepper to taste
✓2 cups veggie broth
✓1/2 cup heavy cream
✓1/2 cup milk
BUT I kind of winged it as far as measurements went when blending because I had extra veggies to account for. Kept adding ingredients to taste and liquids to thin as wanted.

Thai Basil Chicken Noodle Stir-Fry
Servings: 4
Prep Time: 15 minutes
Cooking Time: 15 minutes
Total Time: 30 minutes
Ingredients:
300 g rice noodles
2 tablespoons vegetable oil
400 g chicken breast, thinly sliced
3 garlic cloves, minced
1 red bell pepper, thinly sliced
1 small carrot, julienned
3 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1/2 teaspoon chili flakes (optional)
1 cup fresh Thai basil leaves
Lime wedges, for serving
Chopped green onions, for garnish
Instructions:
Cook the Noodles:
Prepare rice noodles according to package instructions. Drain and set aside.
Stir-Fry Chicken & Veggies:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and sauté for 30 seconds. Add chicken and cook until no longer pink, about 4–5 minutes.
Add red bell pepper and carrot, stir-fry for 2–3 minutes until tender-crisp.
Add Sauce & Noodles:
Stir in soy sauce, fish sauce, oyster sauce, sugar, and chili flakes. Add cooked noodles and toss to coat evenly.
Add Basil:
Remove from heat and stir in Thai basil leaves until wilted.
Serve:
Divide stir-fry among bowls, garnish with chopped green onions, and serve with lime wedges.
Tips:
• Protein Swap: Use shrimp, tofu, or beef instead of chicken.
• Spice Level: Adjust chili flakes or add fresh sliced chilies for heat.

Cabbage Soup
This is very healthy and so delicious
Ingredients
1 large cabbage.
2 small onions diced
2 cans of stewed tomatoes.
1 pouch Lipton Onion Soup Mix any flavor.
1 large celery chopped very small.
Ground beef
Directions
Fill a large saucepan halfway with water, bring to a boil, then add the vegetables, then bring to a simmer.
Cook 1-2 pounds of burger separately draining any fat.
Add any spices you like and Lipton soup mix.
Add the meat, simmer for a few more minutes then taste
This soup is great for all of us, especially on rainy days!

✓ Ingredients:
– 2 potatoes, diced
– 1 carrot, sliced
– 1 bell pepper, chopped
– 1 small cabbage, chopped
– 2 stalks of celery, sliced
