Cheesy Spaghetti Garlic Bread
Ingredients:
1 loaf French bread, halved
2 cups cooked spaghetti noodles
1 cup marinara sauce
2 cups mozzarella cheese, shredded
2 tosp butter, melted
2 cloves garlic, minced
1 tsp Italian seasoning
Fresh parsley, chopped (optional)

Directions:
Begin by heating your oven to 375°F. In a small bowl, stir together the melted butter, minced garlic, and Italian seasoning until well blended.

Slice the French bread loaf in half lengthwise. Place both halves on a baking sheet, cut side up, and brush the garlic butter mixture over the surface of each.

Add the bread into the oven and bake for about 5 minutes, just until the edges start to crisp up.

In a separate bowl, combine the cooked spaghetti noodles with the marinara sauce, mixing until the noodles are evenly coated.

Spoon the saucy spaghetti onto each toasted bread half, spreading it out evenly.

Sprinkle the shredded mozzarella over the spaghetti layers, covering generously.

Return the loaded bread halves to the oven and bake for another 10 minutes, or until the cheese is melted and starting to brown.

Once out of the oven, garnish with chopped parsley if you like. Slice into portions and serve warm for a fun and flavorful twist on pasta night!

Taco Bell Chicken Quesadilla Copycat
Ingredients:
For the Quesadilla Sauce:
1/4 cup mayonnaise
2 tablespoons sour cream
1 teaspoon taco seasoning
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon sugar
For the Quesadilla:
1 cup cooked chicken breast shredded or chopped
1 cup shredded Mexican cheese blend or cheddar and Monterey Jack
4 large flour tortillas
2 tablespoons butter or oil for cooking

Directions:
In a small bowl, combine mayonnaise, sour cream, taco seasoning, paprika, cayenne pepper, garlic powder, and sugar Mix until smooth and set aside
Spread about 1 tablespoon of the quesadilla sauce over one side of each tortilla Divide the shredded chicken and cheese evenly over two tortillas Then top with the remaining tortillas sauce side down
Heat a skillet over medium heat and add a small amount of butter or oil Place one quesadilla in the skillet and cook for 2 to 3 minutes on each side or until the cheese melts and the tortilla is golden and crispy Repeat with the remaining quesadilla
Cut each quesadilla into quarters and serve hot with extra sauce on the side if desired

Greek-Stuffed Baked Potatoes
Ingredients:
- 4 large russet potatoes
- 2 tbsp olive oil
- Salt and black pepper to taste

Greek Stuffing:
- 1 cup cooked and shredded chicken (optional)
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/2 cup Greek yogurt
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and black pepper to taste

Instructions:
1. **Bake the Potatoes:**
Preheat your oven to 400°F (200°C). Scrub the potatoes clean and dry them. Rub the potatoes with olive oil and sprinkle with salt and black pepper. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

2. **Prepare the Greek Stuffing:**
In a large bowl, combine the cooked chicken (if using), diced cucumber, diced tomatoes, diced red onion, crumbled feta cheese, sliced Kalamata olives, chopped parsley, and chopped dill.
